CNYEats Cream Cheese Frosting on top of Poor Man’s Cake

This week we bake for the “Poor Man” (don’t we all claim to be?!).   On page 164 of our book A Taste of Utica, there are two recipes for Poor Man’s Chocolate Cake. You can’t miss especially when you look on page 163 and top those cakes with homemade cream cheese frosting.  Ready?  Here we go. Poor Man’s Chocolate Cake by Michael & Judith Labombarda “This is my favorite chocolate cake in the world.  My recipe has been in the family for years.  Whenever I make and bring it to a gathering outside Utica, people go absolutely bonkers and beg [...]

Enter the Taper and Red Wine Gluten Free Chocolate Cake

This is it. The most looked forward to yet dreaded part of marathon training, tapering.  When all your hard work comes to a head, you need to reduce those miles and make every workout count. There are many schools of thought when it comes to tapering.  One rule is to reduce training by 15% in the third last week before a marathon. Reduce training again by 10% in the 2nd last week. The theory behind the taper is that the reduction in work will allow complete muscle recovery from months of training.  It will bring back the shock absorbing capacity [...]

Adzuki beans

For some reason, getting out of bed this week has been fairly easy.  The alarm went off this morning and my head was clear, no morning fog.  I was on the treadmill pounding out 4 1/2 miles at a pace of 8.57 for 40 minutes. I did the first mile set at 6.5, then 6.6, 6.7, and the last mile I was up and down from 6.6 to 7.5.  That’s the way I entertain myself on the t/mill. I play with the speed. A Cake For Jill’s Mom:   HAPPY BIRTHDAY!   10" Marble Cake with Peanut Butter Filling (Joanne's secret recipe).   Yellow butter cream frosting.  And a cookie to boot… Shane and I enjoyed a quiet morning walking down the Parkway.  Today’s goal was to walk 60 minutes.  Goal met:  1 hour 5 minutes.  4.53 miles.  I decided, as creepy [...]

Just Two Cakes

Hey Everyone! Great news!  My mince pies were featured on Gather (Tuesday).  Check it out (#2 under the food finds):   Gather Spotlight But first, lets talk workout.   Monday morning began with aches and pains. I'm not sure what from but it stopped me from working out.  So I had 37 minutes on the Elliptical when I got home from work.  Ted had taken Shane to run some errands in the car and I made use of "home alone" time.  Tuesday morning, determined to overcome any set backs, I got up at the usual time and ran 3.3 miles.  [...]

Fun things that happened over the weekend…                            Here's a photo of the cake adorned with candles sent to me from Bonnie during the birthday celebration...                                         A recap:  2 Vanilla Cream Cakes.  One filled with vanilla frosting and French Vanilla icing.  Elmo was the star on that cake.  Surrounding the Elmo Cake (not pictured) were the Easy Cake Truffles (see below for recipe).  The second cake was filled with [...]
