Broken Wrist Runner and Mushroom Farro Thick Soup

On December 10th I slipped on ice and broke my wrist. Never having broken anything before, I wasn’t sure what I had done.  Here is the reenactment of that fateful morning: Just wasn’t in the mood to do an out and back longer run of 14 miles. I thought I’d do a short run at the college track and leave the long run for Sunday.  After finishing several laps, I exited through the gate, looked down and saw a white patch of snow.  Turned out it was a sheet of ice.  The fall happened faster than any fall off a [...]

An Inspiralized Spring Promotion

Another super duper surprise in a box:  3 cans of Tuttorosso Tomatoes.   Can’t wait to use these in one of the recipes which came in the same box. First, let’s talk about this promo so everyone can hop on board. During the “Inspiralize the Spring” promotion which begins on 3/25/15 through 4/15/15 on Facebook, the folks from Tuttorosso will be giving away 750 aprons, 15 copies of Ali Maffucci’s book  of “Inspiralized” (cookbook) and a GRAND PRIZE package to include a nifty kitchen tool called the Inspiralizer*, a signed copy of the cook book, a Tuttorosso apron, and a collection [...]

Roasted Beets with Farro

Sometimes when we get those annoying cravings for something sweet, instead of turning to refined sugar products that simply serve to satisfy taste buds but do nothing by way of nutrition, opt for a nice beet salad or simply a few chunks of cooked beets tossed to the side of your favorite dish.  The beet is packed with goodness and sweetness. It will trick your brain  (and tongue) into thinking you gave it dessert.  Beets are highly nutritious and “cardiovascular health” friendly root vegetables. Certain unique pigment antioxidants in this root as well as in its top-greens have found to [...]

Recovery and Asparagus Salad with Fried Eggs

After running the Tacoma City Marathon it was time for an extended recovery period. It’s tough because there is all this post marathon high left in the system.  Yet the body needs a break after training for so many months over so many miles.  The recovery period shouldn’t be lying on one’s back, wine glass in hand with a bag of veggie chips.  *Notice I said veggie chips? Well when you eat enough of them, there is nothing healthy about it.  A chip is a chip whether it be potato or beet. Active recovery helps expend excess energy while staying [...]

Arla Dofino Fontina Tuna Puttanesca

I was invited to an exciting event featuring creative cooking using a quality cheese called Arla Dofino. Due to the unfortunate scheduling, I couldn’t go but was still given the opportunity to experience the quality and flavor of Arla Dofino cheeses.  Arla cheese is made from the milk of local Wisconsin dairy farmers who take pride in meeting our standards and their own. The cows who make the milk for our cheeses are not treated with rBST. The FDA has determined that “No significant difference has been shown between milk derived from rBST-treated and non-rBST treated cows.” – SOURCE I [...]
