Dark Chocolate Chunk Zucchini Bread

Rainy days are made for doing in-house chores, watching movies, reading a good book, or getting creative in the kitchen.  You know what my choice is and my goodness did I make the best out of this dull, wet day. First I put together a cucumber salad which had red bell pepper, celery, tomatoes, a green onion, sautéed sweet onion with edamame, and of course cucumber.  Made up a balsamic Dijon dressing with mandarin orange infused olive oil. Next, I cut the corn off 5 ears of corn.  Sauteed sweet onion with the corn.  Peeled and cut up a large [...]

All In Chocolate Almond Chip Cookies

I should have called this post “Joanne’s Kitchen Experiment” but then again, any time I begin perusing my cupboard shelves without a recipe in hand, anything that comes out of the oven is an experiment. Thankfully, the result was another success. Today I got busy with butter, oats, chocolate covered almonds, chocolate chips and cacao nibs. Ingredients:  Makes 2 dozen 1/2 cup + 3 TBS unsalted butter, softened 1 1/2 cups sugar 2 tsp vanilla 2/3 cups skim milk 21/2 cups flour 1 1/4 cups oats 1 tsp baking powder 1 tsp baking soda 1/2 cups chopped chocolate coated almonds [...]

Chocolate Zucchini Bread with Dark Sweet Cherries

‘Tis the season for zucchini.  We were given squash after squash from co workers.  I’ve been making my traditional pineapple zucchini bread for sweets and on the savory side, I’ve made stuffed zucchini with tuna, salads with fresh zucchini, and zucchini patties.  We’re enjoying every thing zucchini. Today, I followed the pineapple zucchini bread recipe found here, but omitted pineapple for cherries and added chocolate. Lots of chocolate.  A sure crowd pleaser. Ingredients: 1 1/4 cup canola oil 2 cups sugar 2 tsp vanilla extract 3 eggs 3 cups flour 3 TBS unsweetened dark cocoa powder 2 tsp baking soda [...]

Donut Hole Cake

The room smells like donuts.  Just look on the counter and you’ll see why.  It’s a huge cake dotted with donut holes.  A moist devil’s food cake envelopes 12 plain donut holes.  Over the top, decorating the rich chocolate frosting are 12 more donuts, cut in half to make an interesting pattern. Unique inside and out. Here’s what you need: 2 boxes of Devil’s Food Cake mix 15 plain donut holes 3 cinnamon donut holes 3 powdered sugar donut holes 3 chocolate donut holes 16 oz chocolate frosting 16 oz cream cheese frosting Prepare the cakes according to the box [...]

Country Crock Whipped Cream Chocolate Sheet Cake

I’m all so Baking Happy lately.  Maybe it’s because Easter is right around the corner or maybe because it’s still so cold outside that I’m at a loss to do anything else.  Whatever the reason, the outcome from my obsession is sweet and delicious so there is very little incentive to stop.  Plus, I was able to use a coupon to purchase Country Crock Spread for their Easter Baked Goods recipe contest.  That’s a lot of motivation to spend more time in the kitchen.  Here is what I did. The first recipe, CHEWY BROWN SUGAR OAT BARS was a [...]

The Chocolate Cookie Experiment

According to altiusdirectory.com, “there are three particular days to celebrate Chocolate Day. First Chocolate Day is on July 7th and US National Chocolate Day is on October 28th. The third and the most famous is World Chocolate Day, which is celebrated on September 4th.”  The site also suggests chocolate is good for the heart, blood pressure, the brain, etc. and that’s enough of an excuse for me to play with chocolate in my kitchen. The Chocolate Cookie Experiment While tapering for a marathon, the body has all this extra energy and if you don’t want to use it cleaning the [...]
