Chocolate Zucchini Bread with Dark Sweet Cherries

‘Tis the season for zucchini.  We were given squash after squash from co workers.  I’ve been making my traditional pineapple zucchini bread for sweets and on the savory side, I’ve made stuffed zucchini with tuna, salads with fresh zucchini, and zucchini patties.  We’re enjoying every thing zucchini. Today, I followed the pineapple zucchini bread recipe found here, but omitted pineapple for cherries and added chocolate. Lots of chocolate.  A sure crowd pleaser. Ingredients: 1 1/4 cup canola oil 2 cups sugar 2 tsp vanilla extract 3 eggs 3 cups flour 3 TBS unsweetened dark cocoa powder 2 tsp baking soda [...]

Wild Maine Blueberry Oat Squares

Baking something delicious for snacks or dessert doesn’t get any easier than these blueberry oatmeal squares.  I’ve seen a lot of this type of recipe on various sites lately which encouraged me to jump on the wagon and get baking.  Boy! Wild Maine Blueberry Oat Squares Makes approximately 20 small [...]

Avocado Cream

Today’s long run didn’t go so well which wouldn’t be a problem except that it is my last long run before the Grandma’s Marathon on June 20.  It’s always nice for that last long run to be a confidence BUILDER not a confidence SQUASHER.  Just like race day, you never can tell if the body will be willing or unwilling to perform. I’ll give myself another chance with a slightly shorter distance next weekend and hope for the best.  In the meantime, this body was in the mood for comfort food but instead of diving into a pint of ice [...]
