Puttin’ on the Ritz

We are into the hot, steamy days of summer.  Who feels like baking when temperatures are close to 90 degrees? Certainly not me.   Once all chores were done and we had our fill of sunshine and heat, we took the fun in doors and got creative in the kitchen without heating things up.  These no bake treats are the perfect combination of salty and sweet.  Ritz Surprise Cookies  Ingredients ·        1 cup of hazelnut chocolate spread ·        Ritz crackers (these are light and buttery which work perfect for the finish of rich, dark chocolate) ·        2 cups of dark chocolate [...]

Maple Coconut Macaroons

Last December was not the most festive time of the year for me.  It was when I broke my wrist which among other things, put a huge damper on my holiday baking.  It was during that time when Bobs Red Mill sent a surprise:  Cake in a Crate.  This is a truly novel idea of sending a recipe plus all ingredients needed to make a fantastic dessert or snack.  I received the recipe for Maple Coconut Caramel Macaroons by Tieghan Gerard of the blog Half Baked Harvest.  This was first on my list once the wrist healed enough to get [...]

Hemp Heart Chia Banana Oat Cookies

This was my first weekend back baking with this broken wrist situation. Not fun.  It’s frustrating and slow going on the road to normal or as normal as it will ever be.  I’m working on flexibility more so than strength. Physical therapy once per week is helping but daily exercises are most important. Running: Yes, I’m doing it. It can be painful at times and I have to run with the brace on in case I fall again.  My pace is slow, very slow but I’m getting miles logged and as long as I feel I can run 26 then [...]

Whole Wheat Honey Cookies

After getting back from one of my longer runs in this training cycle, I was craving cookies.  Unfortunately, we don’t keep a lot of cookies in the house so if we want them, I make them.  The question became (since it was all up to me), what kind of cookie did I want?   The answer was clear once I perused the cupboard shelves.  Something with honey! A bit about honey from Ole McDonald Farm: Honey is considered a low glycemic food source, but studies have shown that honey is well digested and performs as well as high glycemic index carbohydrates [...]
