Red Skin Potatoes with Colored Pepper Pea Sauté

No exercise tid bits to share.  I’m getting on a 6 am flight to Chicago only to return home at 8:30 tonight. Have to be on the NYS Thruway by 4 am… ahhhh! I’m crazy!  Hope you enjoy the recipe…. Now I’m not a mashed potato person but Ted enjoys them on occasion.  This recipe uses the red skinned potatoes which turn into a light, airy mash.  Either put them in a bowl and let your hungry clan scoop them out or you can pipe them into little delicate swirls.  I chose to pipe them into spindle tops. Oh! Let’s [...]

23 Glorious Miles and Millet Salad

Today was my last long run before the marathon.  For confidence sake, I had to do 23 miles. It started out as a really bad run, got heaps better, went a bit down hill, then ended on a good note. I wore the top and skort that is the outfit for my marathon. I wore the pace band around my lower arm to protect against the chafe that the phone sleeve gives me.  I wore my Newtons and my Injinji socks.  I had the running fuel which I planned to use for the marathon. Banana, Gu Shot, Clif Shot, Sports [...]

Chipmunk Freedom and FroYo

Monday’s workout:  A 3.8 mile treadmill run. Nothing fancy, just plodding away the miles while watching the news.  A light leg workout followed for 40 minutes with abs mixed in.  The morning was too perfect to pass up an easy, enjoyable run with Shane.  We logged just over 5 miles. Total miles today = 9.40 easy running miles. I managed to squeeze in a chest and arm workout last night so I have one more day of back and shoulders then it’s all running focused.  It surprises me that biking doesn't effect running.  Yesterday, after my "quality run", Ted and [...]

Did I Run? and An Adventure in Greek Food

Did I run? Was the hamstring up for the challenge?  The answer: Yes.  It wasn’t a quality run but it was a run.  I walked-ran the first couple of miles then fell into a slow run for the remaining 5.  Total miles = 7.09.  I used the thigh wrap and pulled the strap really tight.  Nothing more annoying than the thigh wrap making its way down your leg as you trot along.  I checked a couple of times to make sure my calf didn’t turn blue. Yes, I had it THAT tight.  As I started down the road with Shane [...]

CEimB: Mixed Berry Cobbler Pancake Cookies

This weeks Craving Ellie recipe was chosen by Pam of Cookies with boys.  Pam is always making something that is sure to please every family’s tastes.  Check out her site for this weeks recipe.  The recipe, by Ellie Krieger, can also be found at FoodNetwork.   The recipe I made, can only be found here at Apple Crumbles. I absolutely loved the sound of the Mixed Berry Cobbler, but knew we would only take a couple of bites then the rest would go to waste.  We just don’t eat desserts.  Since I didn’t want to miss this weeks cooking with the [...]

Lake Delta Triathlon and Favorite Oatmeal Cookies

Sunday was the Lake Delta Triathlon.  Both Ted and I had our first experience as part of a relay team in this fun event.  Our swimmer was Tracy out of Syracuse – yay Tracy!  WOW that gal can swim!  Recap:   Shane and I went for a 2 mile run at 5 am.  It was just beginning to sprinkle.  Ted and I packed our rain gear.  We left the house at 6:20 and made it to Delta Lake Park  by 7 am.  There was already a lot of activity. Richard met us at the event. He was there to help if [...]
