This week, Bri of Yoshimi vs. Motherhood chose a wonderful dinner which should have used chicken as the protein but, well, you know how that goes with this Pescetarian. Serving 2 3 fresh tomatillos The tomatillo fruit is surrounded by an inedible, paper-like husk formed from the calyx. As the fruit matures, it fills the husk and can split it open by harvest. CEimB Tuscan Roasted Vegetables

ROAD TRIP to get ice cream.  All three of us wanted ice cream so we hit the toad to Tasty Treat on Coventry Ave. in Utica. I noticed the ad in the newspaper the other day for Tasty Treats boasting that they serve Doggy Sundaes.  PERFECT! Shane was so excited! CNY Tri Club Practice and CEimB Raisin Toast with Honey Walnut Spread

Before getting into the Ellie Krieger recipe of the week, I’ll tell you about the workouts this week that have been different from my usual routine.  It’s good to get out of a comfort zone, right? No matter how difficult or intimidating it is. Monday: This was routine.  Cross Train with the elliptical for 30 minutes. Weight train chest & arms for 25 minutes. This week’s Craving Ellie recipe was my pick.  I was in the mood for something to do with Apples. Surprised? CEimB Lemon Ginger Iced Tea with Berry Cubes

Who doesn’t love a refreshing glass of iced tea when the summer heat is making our body temperatures rise?  Ellie came up with a recipe that beats the heat, refreshes, and makes you feel good inside.  It’s not too sweet (but of course I didn’t add the amount of honey recommended in the recipe), but it is lemony, cold, and the berry cubes are so much fun to eat.
