CEimB Parfaits and Smoothies

Look who made the USAWeekend!   ELLIE! Because Ted and I were having too much fun in the sun, I missed last weeks CEimB recipe “Muesli Parfaits” chosen by Sarah of Sarah’s Kitchen Adventures. The recipe looked so good, there was no way to pass it up. Ted and I thoroughly enjoyed our parfaits for dessert after our first dinner back home. Makes 4 Servings 1/4 cup sliced and toasted almonds 1/4 cup chopped and toasted walnuts 1 cup non fat yogurt 1/2 cup skim milk 2 TBS honey 1 cup of rolled oats (not instant and not quick oats) 1/2 [...]

CEimB Tuna Casserole

There was no way I could miss making this week’s Craving Ellie recipe.  Not just because tuna casserole is a good meal, but because one of my favorite Craving Ellie gals chose the recipe.  I was looking forward to cooking with Peggy of Pantry Revisited.  Cut to the chase:   We LOVED this recipe. Great job on pickin’ a winner, Peggy! The original recipe can be found on Pantry Revisited.  My version is as follows: 1/2 cup whole wheat bread crumbs 1/2 cup Parmesan cheese 1 TBS olive oil 1/2 onion, chopped 2 stalk celery, chopped 4 oz can button mushrooms [...]

Dietary Tips for Runners and CEimB Crispy Chicken or Tempeh Fingers

With Boston only 12 days away, I thought I’d add a few dietary reminders to ensure feeling your best on the day of the event. Take into account, there is a lot of nervous tension in our bodies when we work ourselves up for a competition so , sometimes, even the best plans don’t work. But that doesn’t mean we can’t try.   The tips: Since food should clear the GI tract before the event starts (this prevents cramping), it’s best to eat 2 to 4 hours pre-start time.  This will enhance the livers ability to use glycogen stores. *If eating [...]

CEimB Creamed Spinach

I really had my doubts about this weeks recipe. I love raw spinach so most of the time, it’s uncooked in this house.  If I do choose to heat it, a simple 1-2 in the sauté pan works just fine.  I don’t like a glob of soggy spinach. The recipe for Ellie Krieger’s Creamed Spinach on the Food Network site looked exactly like a glob of green, soggy spinach. However, I didn’t want to disappoint Liz of Not So Skinny Kitchen who made the pick this week so I gave it a try.  What a success!  What a delightful dish!  [...]
