CEimB Chinese Salmon Salad

Happy St. Patrick's Day!  Looks whose excited about celebrating the patron saint of Ireland..   According to legend, Saint Patrick used the shamrock, a three-leaved plant, to explain the Holy Trinity to the pre-Christian Irish people. On with the recipe for CEimB This week Danica of Danica’s Daily picked a TERRIFIC Ellie Krieger recipe. The original recipe is “Chinese Chicken Salad” but no chicken for me and I know Ted enjoys fish so I thought Salmon would be a great substitute. It was. Here is the link to the original recipe:  Ellie’s Chinese Chicken Salad…. and the following is how [...]

CEimB: Aromatic Beef Stew with Butternut Squash

Just a motivational quote to share…   It is wonderful that life continues to challenge and define us, great that there is always more to strive for and assuring that we will always grow from these experiences so the future will be better still. – Deena Kastor This week, Kayte of Grandma’s Kitchen Table chose the recipe. It was beefy and not a dish for me. I was going to make it vegetarian by using beans in place of beef and vegetable broth in place of beef broth but Ted likes beef stew so I stuck to the recipe and [...]

CEimB Banana Splits with Pineapple Topping

This week’s pick is by Shandy of Pastry Heaven.  What a treat!  We love bananas in this house and ice cream never lasts too long.  This was a great reward for working hard all week. I bought a fresh pineapple from the store last weekend but it didn’t last long enough to be used in this terrific dessert. Luckily, crushed pineapple is one of my cupboard staples and readily on hand. The Banana Split Shared by Two (although this recipe will serve 6) 1 (15-ounce) can crushed pineapple, in natural juice 1/4 cup lemon juice 2 tablespoons Demerara Sugar 1 [...]

CEimB: L.O.V.E. Wrap Sandwich

The LOVE Wrap.  What did you guys think?  Basically an egg salad sandwich, right?  I’m not a fan of egg salad but it IS the month of February and when you come a cross a recipe that starts with LOVE it just seems an appropriate choice. This recipe makes 1 serving 2 hard boiled eggs 1 tsp mayonnaise * I used 1 TBS of Roasted Red Pepper Hummus 1/4 tsp Dijon mustard * I used 1 tsp zesty honey mustard 1 1/2 tsp fresh, finely chopped chives * 1 sun dried tomato, packed in oil and chopped fine. This is [...]

CEimB Mocha Red Velvet Cake

We’re traveling to warmer weather which is why I posted this early. Hope to check out the other CEimBers Mocha Cake experience soon. Chaya of Chaya’s Comfy Cook must have had the chocolaty celebration of February in mind when she picked this week’s Ellie recipe. The “real” recipe was a Moist Mocha Cake with Mocha Cream but I really got into Valentine’s Day, made the cake to celebrate on Monday and turned it red! I used the wonderful “Pure Dark” chocolate sent from Food buzz. It was perfect for this recipe. The “Slab” (70% cocoa, a thick chunk, 3 oz [...]
