The LOVE Wrap.  What did you guys think?  Basically an egg salad sandwich, right?  I’m not a fan of egg salad but it IS the month of February and when you come a cross a recipe that starts with LOVE it just seems an appropriate choice.

This recipe makes 1 serving

  • 2 hard boiled eggs
  • 1 tsp mayonnaise * I used 1 TBS of Roasted Red Pepper Hummus
  • 1/4 tsp Dijon mustard * I used 1 tsp zesty honey mustard
  • 1 1/2 tsp fresh, finely chopped chives
  • * 1 sun dried tomato, packed in oil and chopped fine. This is my addition
  • * For Ted’s wrap, I added two pieces of brown sugar turkey bacon, chopped
  • Salt and pepper to taste
  • 1 whole wheat wrap bread, 9” diameter
  • 1/3 red bell pepper, seeded and cut into fine strips
  • 3 thin slices of red onion
  • 1/2 cup of romaine lettuce

Discard the yolk from one of the hard boiled eggs (I won’t eat egg yolks so both of my yolks “hit the road”).  Dice the remaining whole egg and white and put into a small bowl.  Add the mayo. OR hummus, the mustard, chives, sun dried tomato, and bacon (if making it my way).  Stir and mash together with a fork to the desired consistency.  Salt and pepper to taste. 

Lay out the wrap on a plate and spread the egg mixture in the middle.  Top with red bell pepper slices, onion, and lettuce.  Roll it up and ENJOY!

The result:  Ted loved this quick, deli style meal.  I started off ok with it but then the cold eggs got to me (as usual) so I only ate half.  I would make this again but as an appetizer on mini bagel chips or other mini toast rounds, maybe even simply cut the wrap into smaller bite size servings.   It had great flavor, especially with the hummus and the crunchy lettuce, onion, and red peppers were perfect for texture.
