Who doesn’t love a refreshing glass of iced tea when the summer heat is making our body temperatures rise?  Ellie came up with a recipe that beats the heat, refreshes, and makes you feel good inside.  It’s not too sweet (but of course I didn’t add the amount of honey recommended in the recipe), but it is lemony, cold, and the berry cubes are so much fun to eat.

Makes 6 glasses of iced tea

  • 1 cup of fresh raspberries (rinse to clean)
  • Ice cube trays
  • 8 cups water
  • 2 oz honey *Ellie uses 1/3 cup so if you enjoy sweetened tea, make sure to add more honey.
  • 1/2 cup coarsely chopped fresh ginger
  • 6 tea bags *I used Organic Oolong and Kombucha Green tea. Ellie recommends White Tea.

  • 3 lemons, juiced (1/2 a cup)
  • lemon slices for garnish (you can also use mint)

Begin 6 hours ahead of serving time.  Put the raspberries in the ice cube tray and fill the trays with water. Allow to freeze over 6 hours.

In a saucepan, add the honey, 2 cups of water, ginger and bring to a boil.  Reduce to a simmer for 5 minutes.  Remove from heat and add the tea bags.  Let the tea steep for up to an hour.  Pour through a strainer to strain out the ginger and tea bags.

Put the strained liquid in a pitcher and add the remaining 6 cups of water.  Add the lemon juice. Chill.

When ready to serve, place 3 berry cubes in each glass, fill with tea and garnish with lemon and/or mint.
