Egg Beaters

The First of Many – AGAIN

The first 17 mile run.  A lot more to follow up until race day on November 20th.  It was tough and there was one very steep hill, just under a 1/4 mile long.  It hit at the 13 mile point and my legs had just tackled a gradual incline the previous 1 1/2 miles.  Ted met me on his bike at the 11 1/2 mile point.  He was on his way to breakfast with the guys then would tackle a longer, hilly bike ride himself.  That mile he rode along beside me passed by so quickly.  It was nice. The [...]

No good injured and Egg Beating

Wednesday was a day of beating myself up for a bad run and poor attitude.    What a day! Phew.   The best part of Wednesday was this: Somewhat funny movie.  A romantic comedy that got a lot of criticism from me while watching. Ted kept saying “it’s a movie, they have to do that to have a story”.  Still, I enjoyed the light heartedness of it after such a down day. Thursday a recovery run was planned for 3–4 miles.  My right hamstring told me “NO WAY!”    I laced up the sneaks and headed out with Shane.  I couldn’t run [...]

CEimB Southwest Hash and Eggs

This weeks Ellie Krieger recipe was chosen by Melissa of Its Melissa’s Kitchen.  She has a cute little site going on that you will want to check out.  Melissa will also post this weeks recipe so make sure to bookmark it. This one is a winner. The recipe can also be found on page 30 of the book “The Food You Crave”  or can be found here. We didn’t have this meal as a brunch or breakfast, we enjoyed it as a quick and healthy weeknight meal.  I made only a few changes:  I used a green bell pepper instead [...]

Lasagna No Noodles Please

What a fun Saturday.  After I had finished posting this mornings blog, I made a wonderful breakfast of Eggbeaters, broccoli, grape tomatoes, a couple of hot cherry pepper slices and feta cheese.  I put all that on top of one slice of toasted brown rice bread and added 2 TBS salsa. That terrific omelet was washed down with about 16 oz of oh so fine…Timothy’s Breakfast Blend coffee.  But before that… I was enjoying a soak in the tub after my run and heard Shane barking. I ignored it because dogs bark at anything that moves.  It was probably a [...]

Create a Healthy Meal with Amy’s

Workout Review:  12.41 miles ran.  8.36 on the treadmill while watching the Olympics.  That made the time go by quickly.  4.05 outside running with Shane.  My outside run was a lot slower because my left hamstring began to get sore and my right hip started to ache. I might have compensated for the sore hamstring which triggered the hip problem.  Both aches should be gone by tomorrow (fingers crossed).  The weather wasn't the best either.  There was a wind heading out and the roads were slushy. Tonight, Ted and I plan on hitting the slopes again.  He is going to [...]

Love Them Apples

Latest and greatest health news:  Consuming apples and apple products might improve brain health and help diminish symptoms of Alzheimer’s disease.  Nine published studies reaffirm this news.  Apple juice helps reduce oxidation effects and helps to maintain healthy cognitive brain function.  I love apples.   I'm not quite sure they've helped my brain function though.  Some would tell you otherwise.    The summary of the workouts this week, so far. Did she do it?  Yes she did because on this new program I’m following for 18 weeks, I am already at mid level but due to laziness and fear of injury with [...]
