Oh DEER and Teff Stew

It’s been a summer filled with deer sightings daily.  Today after work there were two more sweet little surprises in our back yard. Enjoying dinner. So peaceful and relaxed. But then…there’s a noise It’s those darned dogs! Might want to get a move on. If they come out, there will be trouble. Don’t have to rush, just slowly, tauntingly stroll away.  One last mouthful.   These babies are adorable, aren’t they?   I just wish there weren’t so many of them AND they didn’t like our yard so much. Whole Wheat Spaghetti with Mint Pesto and Zucchini Ribbons

The cooking range is finally installed in my kitchen.  Still no counter tops but a desperate cook can work around that and so I did.  Based on a recipe from “Every Day with Rachael Ray”, I was able to use more fresh picked mint from the garden.  This is a vibrant pasta dish with fresh, summer flavors.  Even though we are still eating on paper plates, we enjoyed this mint-lemon whole grain pasta dish, knowing it was wholesome and pure because we picked it (well, the mint anyway) ourselves. Serves 4 to 6 2 TBS plus 1/4 cup olive oil 2 [...]

Weekend Riding and Smoked Fish Fritters with Beet Vinaigrette

Do your weekends pass by way too fast?    Saturday was such a nice morning, the windows were open, the birds were chirping, and I was so warm and cozy under the covers.  The moment was ruined as soon as Shane discovered I was awake and decided it was time to get up and get out.  With both dogs hooked around my waist, we took off to the golf course for an easy run.  Shane was able to chase the ducks and Zoey was able to run ahead then back, bark at me, and run away again.  We all enjoyed [...]

Wild Rice Salad with Lime Basil Vinaigrette

I’m still in recovery mode from too many races.  It’s a struggle to let my body heal because I want to get outside and run with the dogs, not for 30 minutes but for an hour or more. The weather has been cool and just perfect for an early morning run.  On the positive side, I’ve been in the gym this week using heavier weights and making my muscles work in ways they haven’t been used to working in months. I’m sore, not just my painful hip but sore from some healthy “body building”…or is that “body repair”?! The local [...]

Doesn’t Feel Like Tapering and FOFF Chimichurri Chicken

When you begin a two or three week taper as the marathon approaches, there’s a tendency to get antsy, begin to worry about your training, the desire to keep on keeping on.  During this taper period for my last 6 marathons, that’s exactly how I’ve felt. But this time it’s different.  This week my feet hurt and I’m tired.  Sure, my training runs are shorter in time and miles so overall miles will be less but my body wants time off completely before the big day in Boston.  Next week I’m going to super taper.  I’ll take every other day [...]

Looking forward to the Finish “Swine” and FOFF Easy Fish Tacos

After I run the Boston Marathon, I’m looking forward to running a marathon that has been in my eye since 2010 when I decided I would run marathons.  At that time, it wasn’t MARATHONS, it was Marathon.  Singular. One. Who knew?!!  Anyway, I’m signed up to run the Flying Pig in Ohio on May 5th while Ted will be with me for half of it, or at least to the 9 mile point where the two races split. I get these great emails from the Flying Pig.  Take note of “Hogwash Station”, “Pig Newton” and “Finish Swine”. Flying Pig Marathon [...]
