Looking forward to the Finish “Swine” and FOFF Easy Fish Tacos

After I run the Boston Marathon, I’m looking forward to running a marathon that has been in my eye since 2010 when I decided I would run marathons.  At that time, it wasn’t MARATHONS, it was Marathon.  Singular. One. Who knew?!!  Anyway, I’m signed up to run the Flying Pig in Ohio on May 5th while Ted will be with me for half of it, or at least to the 9 mile point where the two races split. I get these great emails from the Flying Pig.  Take note of “Hogwash Station”, “Pig Newton” and “Finish Swine”. Flying Pig Marathon [...]

FOFF Rice with Mozzarella

…and A LOT of mozzarella at that! An easy, cheesy recipe by Carla Vavala from her book Fusion of Food and Friends. This recipe can be found on page 51.  It’s an easy side dish that the cheesy people in your life are just going to love. Note:  I thought the rice could use a bit more flavor so I added 2 chopped green onions. 1 cup rice (cook according to package directions). *Brown rice recommended for an extra little nutrition boost. 1 TBS olive oil (the recipe suggests butter but I used basil infused olive oil) 3/4 cup mozzarella [...]

FOFF Farfalle with Creamed Basil, Mushrooms, and Peas

I’ve been eating a lot more pasta lately.  Guess that’s ok since I’ve got some long races coming up, although I try not to think of them as races.  It’s easier for my anxiety level if I think of them as “group long runs”.  Keeping with that thought, I’m not sure why this is beginning to happen to me again. What is “this”? Well, “THIS” is those questioning thoughts concerning my training for upcoming events.  Did I run enough miles?  Have I done my long runs fast enough? Efficiently enough? As I read other blogs and hear how well other [...]

FOFF Lobster Lovers Sauce

Homemade red sauce with big chunks of lobster.  And if you cook a fresh lobster yourself, it will be even better.  Unfortunately for Ted, I vowed never to do it again.  BUT… not to fret because our local grocer offers fresh, thick chunks of lobster meat and, if you don’t mind waiting, they will cook the lobster for you. This recipe will serve about 8 people, coupled with your favorite pasta. From Carla Vavala’s book Fusion of Food and Friends and posted by Tommy DeDona. 2 cans, 28 oz. each, whole plum tomatoes 1 1/2, 9 oz., plain tomato paste [...]

FOFF Good A Spinach Quiche

Gosh I hate working out in any way, manner or form after work.  But I did.  It seems I messed up my running schedule this week and Ted has the Cazenovia Triathlon on Sunday so there was little room to work with in making up running time. I had to do a double on Wednesday.  It was hot. I was tired. I did it.  56 minute run complete and now I can have Friday to rest before my long run with a fast finish on Saturday.  Only one problem:  doing the double workout Wednesday then getting in the 90 –105 [...]

FOFF Oven Fries

Page 35 of Carla Vavala’s book “Fusion of Food and Friends”. I'm sure you know about this easy way to make homemade fries? If not, the result is so good and better than Micky D’s (or at least from what I remember…it’s been YEARS since going to the Golden Arches). Serves 4 1 1/4 lb potatoes (I used 4 medium potatoes) 2 TBS red wine vinegar 1 TBS olive oil (I used the Rosemary infused oil - DELISH!) 1/4 tsp salt (Guilty - think I added about 3/4 tsp for salty fries) Cooking Spray (In place of non stick spray, [...]
