Page 35 of Carla Vavala’s book “Fusion of Food and Friends”. I’m sure you know about this easy way to make homemade fries? If not, the result is so good and better than Micky D’s (or at least from what I remember…it’s been YEARS since going to the Golden Arches).
Serves 4
- 1 1/4 lb potatoes (I used 4 medium potatoes)
- 2 TBS red wine vinegar
- 1 TBS olive oil (I used the Rosemary infused oil – DELISH!)
- 1/4 tsp salt (Guilty – think I added about 3/4 tsp for salty fries)
- Cooking Spray (In place of non stick spray, I used non-stick FOIL)
Preheat the oven to 450 F.
Cut the potatoes lengthwise into 1/4 x 1/4 inch strips.
Place in a large bowl with the vinegar and cover with hot water. Allow to sit for about 5 minutes.
Drain and pat dry.
Combine the potatoes with oil and salt and toss to coat.
Add to baking sheet in a single layer.
Bake for 35 minutes, turn over and bake about 10 minutes more or until lightly browned.
Quick, very few ingredients, not so unhealthy, and they’re really, really good.

I love oven fries–and I similarly loathe McD’s! I don’t have any recollection of the last time I ate there. Your fries look much more delicious.
