Vibram 5 Finger Running and Farro Wheat Salad or Cereal

Wednesday didn’t seem my day for speed work.  The sequence of events had me wondering if I should have gone back to bed and tried again the next day. I woke up before the alarm and was just going back to sleep when it went off. Reluctantly, 10 minutes later I got up.  As I was getting dress, the urge to go back to bed was so strong but I fought it and ended up downstairs in the gym.  I saw a 6 mile run at 5K pace was scheduled.  Since it was still very early, I hopped on the [...]

CEimB Chinese Salmon Salad

Happy St. Patrick's Day!  Looks whose excited about celebrating the patron saint of Ireland..   According to legend, Saint Patrick used the shamrock, a three-leaved plant, to explain the Holy Trinity to the pre-Christian Irish people. On with the recipe for CEimB This week Danica of Danica’s Daily picked a TERRIFIC Ellie Krieger recipe. The original recipe is “Chinese Chicken Salad” but no chicken for me and I know Ted enjoys fish so I thought Salmon would be a great substitute. It was. Energy Boosts & Quinoa Tropical Fruit Salad

This time of year it’s easy to feel drained and lacking energy.  You can fight this.  Here’s some tips and tricks I found…well, I don’t know where I originally found them because it was a reference I sent to Ted back in 2007 by Kim Brown, MS, RD.  I happened to come across the email when leafing through a book this past weekend. More than you needed to know? Ok …getting on with it. Mistake: Insufficient calories to meet your energy burn. Correct: If you train one hour per day, add 16 to 20 more calories per pound of body [...]

CNYEats A Taste of Utica White Bean Tomato Salad

This was the PERFECT lunch following an enjoyable 26 1/2 mile bike ride around Utica.  It was fresh, power packed with bean protein, healthy fats, and garden fresh tomatoes and herbs.  Labor day will soon be here. This would be a delightful dish to bring to that family and friends picnic. On page 70 of our book, A Taste of Utica, Mario posts this weeks recipe White Bean and Tomato Salad – serves 4 1 15 oz can white beans (cannellini beans, white kidney beans), drained and rinsed 1/2 cup red onion, chopped *I forgot to buy the red onion [...]

Contemplating “UP” and Grilled Oriental Salad

Hit the treadmill running and then some. The “then some” was the chest and back workout for 35 minutes, but it all began on the dreaded mill.  Interval training:  2 mile warm up. 4 x 5 minute intervals, rest for 5 minutes (slow jog).   To continue outside with Shane for 3 1/4 cool down miles.  Total miles run Monday AM = 10 miles. The mornings are dark now when we leave the house. I wear a reflective vest (did you see my new one from Nathan’s? ) and Shane has a reflective collar and leash.  It was a great running [...]
