Should I and Sweet Peppers with Mushrooms Topped with Egg

A bit of a dilemma going on in this head of mine.  I’m signed up for the Syracuse Empire Marathon on Sunday.  The weather isn’t looking very pretty for Sunday’s run but that’s the least of my concerns.  I came away from Chicago feeling ready to go again.  I’m not super woman it’s just that the plan was to run with Ted in his first marathon and give him any support he needed along the way.  We ran at Ted’s speed which had to be very slow with walking breaks along the way.  Ted insisted on completing his first marathon [...]

Millet Casserole with Fresh Tuna Morsels

Catching up:  Running is going well. Marathons are fast approaching.  Boston 2014 sign up is September 11 for me.  Hope I can get in. Hope it’s still open?!!! I’m tapering down this week and next in preparation for Rochester Marathon on September 22nd.  This training season hasn’t been bad at all. No stress. Not too many aches and pains. No really long mileage weeks.  I think I had one week at 63 but the rest were low 50’s. Most eventful run: A month or so ago when Shane and I were racking up miles in the thunder and lightening, tree [...]

Sriracha Tuna Towers with Micro Greens and Guacamole

This recipe was based on a suggestion found at Weave Thousand Flavors. I changed it quite a bit but used the same “towering” concept.  We absolutely loved this dish. The Sriracha chili sauce can be replaced by your favorite hot sauce but keep in mind, nothing beats Sriracha. Serves 4 * You will need a small can that you have cleaned and removed both ends, such as a 8 1/2 oz can of peas or corn or such. Ingredients 8 – 10 oz of cooked wild rice. *Cook according to package directions and set aside to cool. 12 oz can [...]

Ancient Great Grains

An AMAZING package was delivered by UPS.  Mysterious looking isn’t it?  Open it up and it’s from BOB!  Bob’s Red Mill.  Grains of DISCOVERY. I love cooking with grains.  I especially enjoy experimenting with recipes using Gluten Free grains but since wheat gluten doesn’t seem to bother Ted or myself, I’ll try all healthy, nutrient dense grains.  The sample pack received included: *Information from “Bob’s Red Mill Grains of Discovery” booklet accompanying this sample package. Sorghum:  hearty, high fiber and chewy in texture and perfect for pilafs and cold salads. You can even pop it like popcorn for a special [...]

Vitacost Inspired Kamut Salad with Carrots and Raisins

We were slugs on Sunday.  It started out with rain early in the morning.  We got soaked while running and someone tried to run me over.  Not just a close call but a true as the day I was born, attempt to hit me with their car.   Luckily I was near a telephone pole and able to duck in next to it.   Was the person drunk? At 6 am on a Sunday? Doubtful.  Was the person on their cell phone?  I threw my arms in the air and screamed at the top of my lungs. The reaction from the car [...]

Agreeable Life and FOFF Quick Chicken Tetrazzini

South Carolina agrees with me.  I don’t want to rush anything but…when’s retirement?! When I visit my parents, walks to the marina in Heritage Plantation are a must. Sitting on the docks and enjoying the warm air. Always looking for the alligators in the local water and sometimes seeing them. And don’t forget the turtles keeping just a short distance between him/her and the gator. Pasta Recipe Page 70, Fusion of Food and Friends by Carla Vavala offers a quick, easy and tasty dish for all chicken and turkey eaters. As reported by my number one chicken lover, "it's got [...]
