A Finalist and Swiss & Shrimp Wonton Quesadilla

BIG NEWS!  I was picked as one of the 36 finalists in the California Raisin Growers baking competition. I’m going to Manhattan, Kansas October 14th to show the judges my Morning Glory Buns.  Guess what I’ll be doing all weekend?  Making buns!   Practice, practice, practice. CEimB Sloppy Joes Vegetarian

This weeks Ellie recipe was turned into a vegetarian success for everyone.  The pick was by Chaya of Chaya’s Comfy Cook Blog.  Note: Chaya hosts a “meatless Monday” spot at Sweet and Savory that you should definitely check out. Beware of Your Socks!

First things first:  No critter in the live trap this morning.  I didn't check the peanut butter bait and can only hope it's still there.  If not, the situation is worse than anticipated:  we could have a "smart mouse".   Stay tuned for more updates..... Vegetarian Gluten Free Lasagna

From start to putting this dish into the oven, the preparation time was 1 hour.   After that one hour, the lasagna was in the oven and the dishes were cleaned and put away.  Easy?  Very.  Time consuming?  Depends on how you look at it.  The prep takes about an hour but then you leave the dish to bake for 50 minutes, uncover and ten minutes later, everyone is absolutely dying to dig in.  This dish is healthy, flavorfully rewarding, meatless, and gluten free.  Enjoy!  serves 10 Ingredients Required. 2 Large Eggplant:  Peel and slice lengthwise. CEimB: Easy Chicken-Mushroom… Quesadillas?

This weeks recipe was chosen by Marthe of Culinairy Delights.  There was so much flavor in this dish.  The warm flavors of cumin and chile powder mixed with oregano was unique and married perfectly.  You’ll soon be wondering, as you look at the photos, what the heak I made.  You’ll think ..”THOSE aren’t Quesadillas!!!”.   You will be SO right.
