Pumpkin Donuts

If you have never made donuts, this is a great beginners recipe.  So easy, no fail recipe for pumpkin donuts.  You just need to pick up a special donut baking tin for shaping.  If not, you can use standard muffin tins and make aluminum foil hole makers but you won’t get a uniform donut shape.  It's the taste that counts.                 I used mini bundt tins for 6 of the donuts and muffin tins with foil inserts for the other six.  Which ever, what ever you use, these little cakes turn out moist and [...]

Maple Coconut Macaroons

Last December was not the most festive time of the year for me.  It was when I broke my wrist which among other things, put a huge damper on my holiday baking.  It was during that time when Bobs Red Mill sent a surprise:  Cake in a Crate.  This is a truly novel idea of sending a recipe plus all ingredients needed to make a fantastic dessert or snack.  I received the recipe for Maple Coconut Caramel Macaroons by Tieghan Gerard of the blog Half Baked Harvest.  This was first on my list once the wrist healed enough to get [...]

Hemp Heart Chia Banana Oat Cookies

This was my first weekend back baking with this broken wrist situation. Not fun.  It’s frustrating and slow going on the road to normal or as normal as it will ever be.  I’m working on flexibility more so than strength. Physical therapy once per week is helping but daily exercises are most important. Running: Yes, I’m doing it. It can be painful at times and I have to run with the brace on in case I fall again.  My pace is slow, very slow but I’m getting miles logged and as long as I feel I can run 26 then [...]

Coconut Cacao Squares

Sometimes you just have to ask “Isn’t there an adult to take care of this?!”  Don’t you wish you could rid your mind of all those worries or at least talk to someone and hear those much desired words “Don’t you worry. I’LL take care of it.”  Oh to be a kid again! At what point do we lose the desire to be older and start wishing we were young again? For me and as far as I can remember, the best times were in my 20’s to mid 40’s.  It was a good run. Now I’m a young 53 [...]

Chocolate Zucchini Bread with Dark Sweet Cherries

‘Tis the season for zucchini.  We were given squash after squash from co workers.  I’ve been making my traditional pineapple zucchini bread for sweets and on the savory side, I’ve made stuffed zucchini with tuna, salads with fresh zucchini, and zucchini patties.  We’re enjoying every thing zucchini. Today, I followed the pineapple zucchini bread recipe found here, but omitted pineapple for cherries and added chocolate. Lots of chocolate.  A sure crowd pleaser. Ingredients: 1 1/4 cup canola oil 2 cups sugar 2 tsp vanilla extract 3 eggs 3 cups flour 3 TBS unsweetened dark cocoa powder 2 tsp baking soda [...]
