Wild Maine Blueberry Oat Squares

Baking something delicious for snacks or dessert doesn’t get any easier than these blueberry oatmeal squares.  I’ve seen a lot of this type of recipe on various sites lately which encouraged me to jump on the wagon and get baking.  Boy! Sure glad I did ‘cause these beauties are going fast. The original recipe wouldn’t be touted as the most healthiest if one were watching sugar in take and fat.  Given a few substitutions, we can make these squares rank just that little bit higher on the nutritionally packed calorie scale. Wild Maine Blueberry Oat Squares Makes approximately 20 small [...]

Whole Wheat Honey Cookies

After getting back from one of my longer runs in this training cycle, I was craving cookies.  Unfortunately, we don’t keep a lot of cookies in the house so if we want them, I make them.  The question became (since it was all up to me), what kind of cookie did I want?   The answer was clear once I perused the cupboard shelves.  Something with honey! A bit about honey from Ole McDonald Farm: Honey is considered a low glycemic food source, but studies have shown that honey is well digested and performs as well as high glycemic index carbohydrates [...]

Life doesn’t go as planned and Banana pineapple quick bread

As usual, I signed up to run not one but two fall marathons.  Marine Corp Marathon was an emotional experience with not one of my better finish times. A week before my next marathon, Space Coast in Florida, I’m feeling grumpy, burned out and not in a good place to run a marathon. It’s the week of Thanksgiving and our plans to enjoy the holiday and the race with family have changed so many times because of Luke, now 19 weeks old, because I don’t want to go, and because of another health issue of which we will find out [...]

New York Apple Muffins

This morning I ran with Zoey for 6 miles.  It felt good. The weather was cool, 36 degrees very little wind and the sun was just peaking over the horizon.  Six miles is a good distance.  It feels healthy, just enough to get the heart pumping and do-able under an hour. Nice! I’m in taper mode for the Marine Corp Marathon next weekend.  I only hope the weather is just as perfect as this morning but what ever nature throws my way, I’ll get through it.  One day my mind is in “just enjoy it, take your time, anything under [...]

Personal Accountability and Japanese Styled Cheesecake

Personal accountability for food.  From a recent article published on ama.org:   “The effectiveness of public policy interventions are dependent on individual differences in consumers’ self-control”.   “Lack of understanding in this area may result in policy intended to influence consumer behavior in a positive way, influencing behavior with a negative outcome instead.”  Those who enjoy the “Big Gulp” will continue to enjoy it even though they have to pay more. Japanese Styled Cheesecake The ultimate in creaminess and soft texture with hints of lemon, no crumb base, just all cheesecake to enjoy.  Personal accountability out the window on this one. Serves [...]
