Running in the Cold and Toasted Sorghum Soup with Greens and Beans

It’s Saturday and almost the end of another week into Boston Training. Sunday will conclude week six and it hasn’t been easy.  The winter weather has challenged almost every run.  I’ve been forced to hit the treadmill a few times.  Fortunately, long runs have been done all on the road, even though they’ve been miserably slow.  I’m not sure I get the best workout on the treadmill because I crank up the speed in an effort to get it over with quicker.  This means I’m exceeding training paces. Could this lead to injury? Hope not. The long runs, as I [...]

Staying Warm and Chickpea Salad

We’re keeping warm in South Carolina when our home town in New York is fighting off the cold. 60 degrees vs. 10 degrees.  It might be a tough decision but an extra day in S.C. is sure looking good. My hamstring feels a lot better when I run around the plantation. I guess the flat terrain, the clear roads (no snow in SC! YAY!), the warmer temps agree with my legs.  Ted and I will run a fun 5K tomorrow called The Prediction Run.  No timing devices allowed. Garmin stays home.  On the entry form, the runner predicts his/her finish [...]

Union Square: Tangy Artichoke Cauliflower Ragout

T G I F!   I know, I know… don’t wish your life away but Friday’s are just so darned fun!  It seems in our work place, which, I have to say is stress free, healthy, fun, we all STILL count down ‘til Friday.  What happens on Friday to make it such a great day?  Hmmm…not sure but I think it has to do with the fact that Saturday morning follows which is the day the alarm does not go off.  That’s not to say we don’t wake up at the same early hour, it’s just not triggered by an alarm. [...]

Union Square Cafe: Roast Stuffed Eggplant with Tomato Sauce

“Union Square Cafe serves some of the most imaginative, interesting, and tasty food in America. Now its devoted fans from down the block and across the globe can savor the restaurant’s marvelous dishes, trademark hospitality, and warm decor at home. By Danny Meyer and Michael Romano” Source: Union Square The recipe for Roast Stuffed Eggplant with Tomato Sauce is in the Appetizer section of the book.  To us, it was a whole meal.  I added, instead of the anchovies listed below, vegetarian ground sausage.  Serves 4 6 Baby eggplant (I used 2 large) 3 TBS olive oil 2 tsp minced [...]

Marathon Favorites and Broccoli Squash Salad with Tahini Dressing

I recently read an article listing ten "must do" marathons for various reasons such as scenery to the challenge of the course. Some I've done, some I will do, some I would like to do, and some I will never do. The ten mentioned in the article: 1. Chicago = Ted and I will do this on October 13, 2013. 2. New York City = I've qualified to avoid the lottery system so I'm looking at 2014 to be my NYC year. 3. Boston = Done it 3 times and hoping for a 4th, 5th, 6th...10th. 4. Great Wall = [...]

Wild Rice Salad with Lime Basil Vinaigrette

I’m still in recovery mode from too many races.  It’s a struggle to let my body heal because I want to get outside and run with the dogs, not for 30 minutes but for an hour or more. The weather has been cool and just perfect for an early morning run.  On the positive side, I’ve been in the gym this week using heavier weights and making my muscles work in ways they haven’t been used to working in months. I’m sore, not just my painful hip but sore from some healthy “body building”…or is that “body repair”?! The local [...]
