Union Square: Parsnip Pancakes & Honor Boston

Another weekend...doesn't time fly?! I subscribe to RunBlogRun because the site has writers who offer great tips and stories all about running, my passion, my demon. Recently, Larry Eder offered an article called "On honoring Boston Marathon Memories" which really dug deep. Here is some of the most meaningful words to me, but I recommend you get on over to RunBlogRun and look for the article. ..."The facts are this:  the most iconic marathon in our sport, Boston, was the focus of an attack by determined sociopaths who understood some things about the marathon, like, what time it was held and where people would [...]

Union Square Cafe: Smoked Trout, Vegetable, Squash Gratin

It looks like a dip doesn’t it?  I guess that might be an idea. This dish can be served as a hearty and healthy appetizer, with a little modification of course. If the ingredients were all chopped small, then offering the Gratin with crudités or crackers might prove to be the hit of the party. Serves 4 – as a meal 8 – 12 oz Smoked Trout, peel off back skin and break into pieces. 4 TBS extra virgin olive oil – separated 2 tsp minced garlic 1 onion, chopped 1 bunch (about 8 – 10) green onions, chopped and [...]

Union Square: Stuffed Chicken Breasts

"Your body will argue that there is no justifiable reason to continue.  Your only recourse is to call on your spirit, which fortunately functions independently of logic."  - Tim Noakes Another snow storm is expected to hit our neck of the woods.  More snow… UGH!  Ted said to me this morning “If we have another winter like this one, we’re moving!”. We’re in the toughest month of the year in my book: February.  It’s cold, no more football, serious training month for Spring marathons, it’s a tough month! But we like tough right? I mean, that’s WHY we challenge ourselves. [...]

Union Square: Pumpkin Risotto

Pumpkin, maple syrup, arugula…so much flavor in this dish.  The Union Square Cafe out did themselves with this mix of flavors. The perfect winter, warming rice dish.  Use diced squash, simmer in a homemade broth with the sweetly spiced pumpkin flavors to bring out the best of this dish. First, make the pumpkin broth. *I split the broth between vegetable, cider and wine but you can use all 8 cups of stock if you want. 1 TBS olive oil 1 onion, thin sliced 2 carrots, peeled and sliced 2 celery ribs with the leaves, washed and sliced 1 leek, white [...]

Union Square: Tangy Artichoke Cauliflower Ragout

T G I F!   I know, I know… don’t wish your life away but Friday’s are just so darned fun!  It seems in our work place, which, I have to say is stress free, healthy, fun, we all STILL count down ‘til Friday.  What happens on Friday to make it such a great day?  Hmmm…not sure but I think it has to do with the fact that Saturday morning follows which is the day the alarm does not go off.  That’s not to say we don’t wake up at the same early hour, it’s just not triggered by an alarm. [...]

Now its devoted fans from down the block and across the globe can savor the restaurant’s marvelous dishes, trademark hospitality, and warm decor at home. By Danny Meyer and Michael Romano” Source: Union Square The recipe for Roast Stuffed Eggplant with Tomato Sauce is in the Appetizer section of the book.  To us, it was a whole meal.  I added, instead of the anchovies listed below, vegetarian ground sausage.  Serves 4 6 Baby eggplant (I used 2 large) 3 TBS olive oil 2 tsp minced [...]
