Pizza Party: Pizza Margherita

Is everyone getting ready for the big game?  Super Bowl Sunday Baby!  What’s your meal plan?  This week I have quite a few pizza recipes if you want to host a pizza party game day blast.  These are all easy to make and quite flexible if you have your own specific preferences.  Everyday this week a new recipe. Let’s start with Dave Barry’s Super Bowl party tips, just in case you didn’t see them in USA Weekend. Everything you need for a perfect Super Bowl bash: BEER.  You should have a lot of beer, in case the game is hideously [...]

FOFF No Wok Needed Slow Cook Cashew Chicken

This week Carla Vavala offers another slow cooker recipe that is easier to follow than baking refrigerator cookies. From the book Fusion of Food and Friends.  This is a recipe that tastes even better as left overs.  Beware of adding the nuts and make sure to use UNSALTED since the fish and oyster sauces plus the broth (it might be a good idea to use reduced salt broth) give this dish enough salty flavor.  *Vegetarian lentil version offered below and is more flavorful than the chicken…just saying. 1 1/2 lbs. chicken breasts – cubed 6 cloves garlic (Ted said it [...]

What’s New This Week and Tabouli

What’s new? Well… Zoey got her stitches removed. YAY! Although she was suppose to take it easy over the past two weeks, that lasted about two days. It was more work keeping that crazy little lady down than playing with her.  We went for a 2 mile walk Monday morning but that isn’t enough to wear her out.  She’s going to be an endurance running queen if there ever was one. Upstate news:  The Empire State Marathon in Syracuse, NY was held on Sunday, Oct. 21. The marathon is small and friendly, just over 500 runners.  There’s also a half [...]

Flourless Raisin Muffins, Vegan Friendly

That Zoey!  She locked Shane and I out of the house then turned on the Roomba vacuum.  Ted’s say’s she’s trying to replace me: locking me out and doing the cleaning.  Hmm! How she locked us out. Shane and I were having quality time in the yard, tossing the Frisbee, getting brushed when Zoey and Ted peaked at us through the door. Zoey wanted to get in on the action but Ted shut the door.  In getting a little upset about being shut IN, she must have jumped up and turned the lock.  Luckily Ted was home. Lesson learned: Don’t [...]

FOFF Vegetarian Sweet Potato Burritos

A day early and a dollar short…or something like that. Anyway, the FOFF recipe is a day early this week for no reason, just that I felt like posting it early.  My blog, my prerogative. SO Filling!  But not so photogenic or could just be the photographer …eh hemmm! A really good meal for high nutrition and low fat diet watchers.  It’s a keeper!  Thanks to Carla Vavala and her book Fusion of Food and Friends. Page 44. 1 TBS vegetable oil (I used olive oil) 1 onion, chopped 4 cloves garlic, minced 3 TBS chili powder (I toned it [...]

FOFF Thunder Valley Pad Thai

I really expected the heat to be turned up with a recipe beginning with "Thunder Valley". The flavor was rather subtle, in fact, next time I'll double the sauce. We don't have much experience with Pad Thai so I'm not quite sure how this was suppose to turn out. It was just ok for us. 1/2 lb medium rice noodles (I used rice linguine) 1/3 cup ketchup 1 TBS Black bean sauce 1 1/2 tsp Sriracha chili sauce 2 TBS fish sauce 1 TBS peanut oil (didn't have it so I used olive oil) 6 green onions, chopped: Include the [...]
