FOFF Antipasto Pasta Salad

This week is the 2nd week of tapering for the Boston Marathon.   Mileage has been cut back to about half of the highest total miles during one week of training which would make my total miles this week somewhere around 30 – 32 miles.  My longest run was no longer than 12 miles.  My easy days are no more than 4 miles.  I will get 2 speed workouts this week. The first was done on Monday with the help of Jen. Running with her allowed me to get in 7 miles at my marathon pace (or close enough).  The 2nd [...]

Confucius Say… and Vegetable Dal

Confucius say…It does not matter how slowly you go as long as you do not stop. I will run and I will try not to stop in Saturday’s Lake Effect Half Marathon with winds predicted to be about 15 to 20 mph and snowing.  The temperatures will drop for the weekend and it doesn’t look like the best of days to go for a run but it’s for a good cause and all runners will endure the same less than perfect conditions.  It’s times like this I really wish we lived in California! In order to get myself to the [...]

Orange Mint Mung Bean Salad

This week, Monday was so tough that I got up too late to do any cross training aerobics.  I settled for a 30 minute legs and stomach workout followed by a 5 mile run. Tuesday I was determined to get up early and get my long run in for the week.  I DID manage to get up early but then my stomach was all upset and grumpy so it put me [...]

New York Black Bean Taco-Wraps

I couldn’t make up my mind:  A crisp corn taco or a soft Flax whole wheat wrap?  One of each.  That’s what happens with dessert options, right?  Can’t make up your mind….”I’ll have one of everything and Oh …. bring spoons for the table!” This was my dinner and the "Meat Eater's" vegetable side dish.  The “Meat Eater” enjoyed these delicious Taco come Wraps more than he did the Healthy Non-Vegetarian Chili-Stew.  Although he won’t admit it. You see, Ted (my resident Meat Eater) has a way of eating the best thing first on his plate.  Like a little kid, he [...]
