Meyer Lemon Fruit Bundt Cake

What makes this cake so good is that the Meyer lemon is a cross between a lemon and a small orange. It’s a little sweeter and less acidic. Right now, we are able to buy them in our local stores. Not really sure why because from what I read, the Meyer lemon season is November to May. A little early or a little late, depending how you look at it. Lemon Luscious Cake

Will bike for food! That is my motto. I will ride the bike on Sunday morning as long as we can stop for breakfast. I will ride the bike on Thursday night as long as we can go out to dinner. Crazy Lemon Cake

Jill's sister is crazy about lemon. The cake for her birthday is a lemon cake filled with lemon curd and lemon ricotta, iced with lemon frosting. Lemon, lemon, lemon. Lemon Ricotta Filling: 1 15 oz Ricotta Cheese 3 TBS Confectioners sugar 1/2 tsp lemon zest 1 TBS lemon juice 1/4 tsp vanilla 1/4 tsp almond extract Mix all ingredients in a bowl.
