Jill’s sister is crazy about lemon. The cake for her birthday is a lemon cake filled with lemon curd and lemon ricotta, iced with lemon frosting. Lemon, lemon, lemon.
Lemon Ricotta Filling:
- 1 15 oz Ricotta Cheese
- 3 TBS Confectioners sugar
- 1/2 tsp lemon zest
- 1 TBS lemon juice
- 1/4 tsp vanilla
- 1/4 tsp almond extract
Mix all ingredients in a bowl. Put into a sieve to let any moisture from ricotta drain out.

Sara and I would be all over this, we love everything lemon. I wonder how fantastic this would all be with Meyer lemons… we made some Meyer lemon curd gelato earlier this year and it was out of this world.
