Soybeans and a Healthy Edamame Salad

The National Culinary Review offered an informative article about farming soybeans.  Here’s a summary of content before we get to the terrifically tasty recipe using Edamame aka soybeans. Soybeans are a versatile, affordable, and nutrient rich crop available in our food supply.  The soybean has a positive environmental impact by contributing nitrogen naturally to the soil.  The bean is planted in May, monitored for any diseases, insects, or other problems during the summer, and harvested in the fall. The benefits of soybeans:   Excellent source of protein and low in saturated and trans fats.  The oil is used in more than [...]

Union Square: Parsnip Pancakes & Honor Boston

Another weekend...doesn't time fly?! I subscribe to RunBlogRun because the site has writers who offer great tips and stories all about running, my passion, my demon. Recently, Larry Eder offered an article called "On honoring Boston Marathon Memories" which really dug deep. Here is some of the most meaningful words to me, but I recommend you get on over to RunBlogRun and look for the article. ..."The facts are this:  the most iconic marathon in our sport, Boston, was the focus of an attack by determined sociopaths who understood some things about the marathon, like, what time it was held and where people would [...]

26.2 and Teff Stew

Apple Crumbles FINALLY got the 26.2 trademark for baked goods.  I’ll be promoting healthy, energy supplying bars, cookies, bread, and muffins.  These will be foods that are easy to pack or grab & go when runners have an event.  Half marathon and marathon focused food. If you want to be a “test subject” let me know.  Boston Training, round 4 Going into week six of this year’s Boston training plan.  It hasn’t been easy since this winter has covered the roads with ice and snow.  We’ve had our share of very cold days which also challenge the body.  This coming [...]

Millet Casserole with Fresh Tuna Morsels

Catching up:  Running is going well. Marathons are fast approaching.  Boston 2014 sign up is September 11 for me.  Hope I can get in. Hope it’s still open?!!! I’m tapering down this week and next in preparation for Rochester Marathon on September 22nd.  This training season hasn’t been bad at all. No stress. Not too many aches and pains. No really long mileage weeks.  I think I had one week at 63 but the rest were low 50’s. Most eventful run: A month or so ago when Shane and I were racking up miles in the thunder and lightening, tree [...]

Long Jog and Pickled Beets with Tagatose

This weekend was our anniversary.  13 years!  It hasn’t gone well. This and that and the other…you know.  Naturally falling in line with all other things upsetting, my running suffered.  My mind wasn’t in it so every step, every foot fall, felt like a bowling bowl dragging me back.  Saturday:  A 90 minute run. Ran with Ted and the dogs then finished the last 40 minutes alone. My mind was heavy with bad thoughts and upsetting things.  I was just happy to finish. In spite of everything, I looked forward to Sunday’s long run. 20 miles.  Taking it easy and [...]
