Guest Post: A Simple Dinner

Simple Spring Dinner: Creamy Spaghetti Squash with Tomatoes One of the best parts about spring—other than the sunshine and beautiful weather, of course!—is that it’s probably the easiest time of year embrace healthy eating. Eating well in the winter can be tricky; between holiday goodies and the abundance of cheesy, carb-filled casseroles, it’s easy to go overboard on foods that may not be that great for us. But when spring rolls around and fresh produce comes back into season, we seem to crave fresh, lighter flavors that tend to be healthier than many heavy winter meals. To lighten up your [...]

Meatless Lentil Hummus with Natural Cashew Butter

We had a great idea for a weekend vacation in July:  Ted and I would volunteer to work the Lake Placid Ironman!  Great idea, right?! Well, it would have been if we had thought about it months ago.  We might be able to volunteer but we won’t have any place to stay.  Every hotel, B&B, and po-dunk Inn is booked from July 26 – July 28.  Oh well, it WAS a good idea.  On to bigger and better things…FOOD! Not chickpeas and tahini but lentils and nut butter. The cashew butter has a less distinct taste than peanut butter and [...]

Break Time and Meatless: Two for Twice as Good

I had a really good run with Ted on Saturday. We ran over 9 1/2 miles at an easy pace. Sunday was a 16 mile run. It should have been a strong long run with a marathon pace last 6 miles.  It wasn’t.  I fizzled.  Not really bad but I didn’t have enough in me to get any where close to goal pace.  I spent the rest of Sunday morning and early afternoon in the kitchen and by 3 pm, began to crash. Monday morning everything hurt, from my neck to my feet.  That’s the body saying “It’s BREAK TIME!”.  [...]

Winter Legs and Vegetarian Sweet Potato Soup with Sun Dried Tomato Pesto

It never fails. With the winter snow, cold, wind, comes my tired legs and sore hamstrings.  Will I back off? No. Will I try something new? Oh yeah. Ever heard of KT Tape? If so, I’d love to hear your experience. If not, I’ll tell you mine when the order arrives.  In the meantime, from Amby Burfoot… As runners, we all go through many transitions – transitions that closely mimic the larger changes we experience in a lifetime.  First, we try to run faster.  Then we try to run harder.  Then we learn to accept ourselves and our limitations, and [...]

$5.00 Run and A Super Vegetable Side Dish

It took me a while to work up the motivation to get outside and run this morning. Once I was outside and got the legs moving, it felt pretty good, in the beginning anyway.  Of course Shane was pulling for the first half mile so it was kind of a cheat. The good feeling didn’t last long. At about mile 3, my legs felt as if they had done 7 miles. At about 4 1/2 I found a $5.00 bill. Naturally I picked it up after surveying the area to make sure there wasn’t anyone around who looked as if [...]

FOFF Roasted Spaghetti Squash

The bright yellow, oval shaped squash you see in the store conceals a wonderful surprise in side:  “Spaghetti”.   Well, it’s not really spaghetti, it’s squash that you can extract from the outer skin with a fork to produce spaghetti like strands.  The flavor of spaghetti squash is lighter than butternut or acorn and not as sweet.  It needs just a little bit of help in the flavor department…like spaghetti.  Plain pasta doesn’t have as much taste as when you cover it with your favorite sauce or toppings.  That’s what we do with spaghetti squash.  We’ll add just a hint of [...]
