CEimB: Pumpkin Pie Muffins

This weeks Ellie recipe was chosen by Hap and Fappy at Oddball Oven Mitt.  The choice was perfect in many ways:  It recognizes the seasonal flavors; It was basic and easy; It was the best pumpkin muffin I’ve ever tasted.  Seriously…the name is perfect for this muffin, "PUMPKIN PIE MUFFIN".   The sweet aroma of pumpkin, molasses and brown sugar that filled the kitchen should have been captured in a spray bottle so I could keep squirting it all year long (less fattening that way).  The recipe is found on page 21 of The Food You Crave by Ellie Krieger or HERE [...]

CEimB: Tuscan Vegetable Soup

What a great time of year for soup!  This vegetable soup was made for Fall, so warming and rich with the flavors of herbs and white beans for texture.  It’s even more appealing because it’s so easy.  Thanks to Pam of Lobster and Fishsticks, this was another Ellie Krieger hit in our home. CEimB: Jambalaya with Shrimp and "Ham"

This weeks Ellie Krieger  recipe was chosen by Anonymous in New York, and can be found on page 236 of Ellie's book "The Food You Crave".  The recipe allowed me to easily hide the vegetarian protein that I substituted for the ham.  It was only revealed to Ted after he first, confirmed that he liked it and second, had consumed half his meal.  The disclosure of the meatless pepperoni addition was followed by the comments...
