Because Mom is Sweet Enough: A Sugarless Chocolate French Toast

Get ready to give Mom a treat.  This is a brunch she’ll never forget.  First we have to make a chocolate  bread that has hints of sweetness but it’s not sweet because of sugar. Oh no.  It’s sugarless.  The chocolate bread is sandwich style bread and if not using it for French Toast, it will perfectly pair with cream cheese or peanut butter.  Eaten when it’s nice and warm, right from the bread maker, it’s super delicious, but don’t do that.  Think of Mom. #WhenWeBake Low fat and deep chocolate flavor. Make the bread a day or so in advance [...]

Banana Nu-Bread Pudding

With 1 quart of skim milk that was unopened and nearing expiration, what else could I make? Oh sure, some healthy soup but that’s not as much fun to make as a good old dessert that brings back childhood memories of Mom’s cooking.  Bread Pudding!   Using skim milk, an over ripe banana and some Nu-Naturals Simple Syrup and Nu-Naturals Cocoa Syrup, this is a reduced fat, reduced sugar version of one AWESOME dessert. *Don’t have any Nu-Naturals Stevia product, get it HERE or, simply double the sugar in the recipe to 1 cup. Serves 16 1 Quart Skim Milk 1 [...]

Breakfast Cereal Cake

Despite all the gripes about this long, cold winter, I’m managing to get outside for most of my runs.  It’s uncertain how beneficial to increasing speed these training sessions are because my pace is slow.  Sometimes the slow running is due to the extreme cold, sometimes it’s due to unplowed roads, ice, pot holes, or just plain tired legs.  Although speed may be lacking or at least staying constant, my fuel burning efficiency has increased.  No longer do I need to take in 200 calories to get me through the 12 mile speed sessions or other hard workouts. I don’t [...]

Arbonne Infused Apple Cider Doughnut Holes

Given a recipe in the October issue of RachaelRayMag.com, and running with the desire to add a little nutrition to a sinful indulgence, I made these Apple Cider Doughnut Holes with a 1 1/2 oz package of Arbonne Protein Powder.  Both Ted and I use this Vegan Friendly protein powder. It has been our absolute favorite for a couple of years now. To add a little more nutrition, substitute the all purpose flour with whole wheat.  What a sweet delight and so easy! Makes about 2 to 3 dozen doughnut hole 12 oz of Apple Cider 5 TBS unsalted butter [...]

Two Four Legged Runners and Cheese Spread Savory Muffins

We had a good morning. Shane put in 7 1/4 warm up miles with me.  Zoey was second up for 5 1/2.  I ran the rest of my 20 mile long run with Pandora. I don’t usually run with music but today, I wanted the distraction. These long runs are a funny thing.  When I first started including the 20 milers in my training back in 2010, I would come home feeling sick and sore most of the day.  Now I get back from the long run, still not hungry but certainly not sick, with only tired legs.  Although the [...]

Hills are the Best and Lemon Blueberry Protein Pancakes

In the past when training for a key race, I’ve never included hill repeats because this area of New York state is hilly enough and I didn’t want to risk injury. But I requested a training plan from a very well known trainer for Boston this year and, well, given his good name, who am I to dispute?!   Today’s workout included hill repeats and was to go something like this: 15 – 25 minute warm up with 8 to 10 x 60 to 90 second hill repeats (approximate 6% to 9% incline), jogging back down for recovery and followed by [...]
