CEimB: Carrot, Apple, Mint Salad

This weeks CEimB recipe was chosen by Jessica of Singleton in the Kitchen.   You can find the recipe at Jessica’s blog site or on page 131 of Ellie Krieger’s “The Food You Crave”.  The very first change I made to this recipe was to omit the mayonnaise.  I used 4 oz of Greek Yogurt instead.   The other change I made, which was a complete mistake, was to add 1 tablespoon of honey to the dressing instead of 1 teaspoon.  Why did this happen?  Because I was taking advantage of Ted asking if he could help and therefore set him to [...]

CEimB: Grilled Thai Beef (Tempeh) Salad
