This weeks CEimB recipe was chosen by Jessica of Singleton in the Kitchen. You can find the recipe at Jessica’s blog site or on page 131 of Ellie Krieger’s “The Food You Crave”.
The very first change I made to this recipe was to omit the mayonnaise. I used 4 oz of Greek Yogurt instead.
The other change I made, which was a complete mistake, was to add 1 tablespoon of honey to the dressing instead of 1 teaspoon. Why did this happen? Because I was taking advantage of Ted asking if he could help and therefore set him to work preparing the salad. In the midst of four arms flaying about the kitchen, I yelled out “ONE TABLESPOON OF HONEY!”.
The other change was to add Spinach and Arugula to make this a large, green salad.
The final change was to use a Green Apple that wasn’t a Granny Smith. It was what I had.
The end result was a very fresh tasting salad. Pleasing because of the crunch of carrots and apples. A little sweet possibly because I used too much honey, maybe because my apple wasn’t a tart Granny Smith. There was also a bit too much mint on our salads. However, it was an enjoyable experience and a great change from our standard vinegary greenery.
Good pick Jessica. Thanks for making a choice that was so easy to prepare and easy to enjoy.

Yummy. It reminds me a lot of a fennel and apple salad I make. And it’s so pretty, too.
You always make such beautiful dishes! We loved this salad. I like your substitutions and I bet the extra honey did not mess it up at all. Hope you are having a great week!
Great call adding the spinach to make it a nice big leafy salad. I may do that next time. I really loved this, and I’m glad you enjoyed it too!!!
I like the idea of turning it into a larger, green salad. Great idea! Glad you enjoyed it.
Healthy, colorful and a delicious salad…very refreshing 🙂
Cheers!

I really enjoyed this one too. I like your subs and also that you mixed it in with greens to make a substantial salad -really good idea!
It looks fabulous!
Will have to add a green leafy the next time I make this salad…….great idea!
I loved it!
I love that you added arugula to it. I’ll have to try that next time.
This looks great, I was afraid that this was going to be too mayo and yogurty, but it looks like the dressing is not too overpowering. I like that you bulked it up with greens.
Hey Joanne! Thanks so much for making this with me this week. Your preparation looks so wonderful and tasty. I actually put my leftovers in a leafy salad the second night (to finish them up) and I thought it was even better. How smart of you to think outside the box like that!
