This weeks CEimB recipe was chosen by Jessica of Singleton in the Kitchen.   You can find the recipe at Jessica’s blog site or on page 131 of Ellie Krieger’s “The Food You Crave”.

The very first change I made to this recipe was to omit the mayonnaise.  I used 4 oz of Greek Yogurt instead.  

The other change I made, which was a complete mistake, was to add 1 tablespoon of honey to the dressing instead of 1 teaspoon.  Why did this happen?  Because I was taking advantage of Ted asking if he could help and therefore set him to work preparing the salad.  In the midst of four arms flaying about the kitchen, I yelled out “ONE TABLESPOON OF HONEY!”. 

The other change was to add Spinach and Arugula to make this a large, green salad.

The final change was to use a Green Apple that wasn’t a Granny Smith.  It was what I had.

The end result was a very fresh tasting salad.  Pleasing because of the crunch of carrots and apples.  A little sweet possibly because I used too much honey, maybe because my apple wasn’t a tart Granny Smith.  There was also a bit too much mint on our salads.  However, it was an enjoyable experience and a great change from our standard vinegary greenery.
