A Taste of Utica

CNYEats A Taste of Utica New Orleans Sausage and Chicken Soup

“This soup is delicious and has just what it takes to warm you on a cold winter’s day – a little kick from the cayenne pepper.  It’s a keeper in my book.”   Page 28 of our book Posted by Jo Giacovelli.  Not too spicy but with a very detectable New Orleans flavor. The cayenne pepper doesn’t add too much kick so don’t be afraid to add the recommended amount.  The smoky kielbasa added to Ted’s version of this soup infused so much flavor into the rice and the chicken, the result was a full flavored soup in a rich broth, I wouldn’t suggest any [...]

CNYEats A Taste of Utica: Pasta Fazoola!

Another winning recipe to warm you from the tips of your toes to the top of your head.  “A mouth-watering dish created during the lean days of the Great Depression”.    Pasta Fazoola is posted by Tony Leone, page 26 in our book...            Tony reminds us to get out the “fresh slices of hard crust Italian water bread.  Slop up the remnants, lean back and loosen your belt!” There are no measurements listed with this recipe.  The quantities listed here are simply what I used to easily feed ten to twelve hungry mouths.  This leaves [...]

CNYEats A Taste of Utica Mushroom Stews

Did you notice the title of this post indicates “Stews” as in plural?  That is because in our book, there are a total of seven (7) Mushroom Stew recipes.  All of them are listed here so take your pick.  There is one meatless version and six versions that contain meat.  All of which look delicious.  The two stews I made were rich, warm, thick and filling.  The mushroom’s woody flavors were mild but detectable.  I did add hot peppers because I remember way back when, after experiencing my very first taste of Utica’s Mushroom Stew, my mouth was on fire [...]

CNYEats A Taste of Utica: Butter Bean Soup

This week we are making Butter Bean Soup.  The recipe was posted by Chris and can be found on page 25 of our book … This is a soup that is rich with vegetables of celery, carrots, onions, and tomatoes.  The large bean called a “Butter Bean”is used to add a smooth, starchy texture to the soup .  Butter beans only have a small amount of fat.  In a 1/2 cup serving there are five grams of fat per 100 calories.   They are a good source of iron, 8% of RDA in one serving.  1 1/2 cups celery, finely chopped 1 [...]

CNYEats A Taste of Utica: HURRICANES

Thank goodness we don’t get Hurricanes in Utica, the stormy kind that is.   We do have a great recipe for Hurricanes from Category 1 to a Category 5 on page 21 of our Taste of Utica cookbook. The recipes were posted by Mario in anticipation of the summer season coming around the corner.  Well we all know that on this November day, it’s Winter that’s right around the corner but that doesn’t make these rum based drinks any less inviting.  No way!  In fact, if you travel to New Orleans, it is known for the famous “hurricane” drink.  Here’s a little [...]

Italian Homemade Green Olives

I never in a million years even thought about making my own olives.  In fact, never wondered how they made it into the jars.  On page 12 of A Taste of Utica CNYEats.com Cookbook is the recipe for how to make your own Green Olives.  Plan on taking a month and a half or more to prepare your olives.  This is how I got started…. I had no idea where to look locally for tree fresh olives, so I went online to Great Olives.com.  I bought 1 box of Jumbo Green Sevillano olives.  That was a LOT of olives.  This [...]
