A simple Squash Pattie recipe to pair with just about any main course.  Tasty and light.  6 Patties.

  • 1 Butternut Squash
  • Salt and pepper*About 5-8 grinds of sea salt and 10 grinds of pepper
  • 1/2 tsp. nutmeg
  • Olive oil

Place the butternut squash in the microwave on high for 12 minutes.* The squash was placed in the microwave early in the day so it would be cooled and ready to work with at dinner time.  Cooking time will depend on size and therefore you must check it with a fork after 12 minutes.  You want it soft enough to be able to scoop out the “meat”.

Remove from the microwave oven carefully (hot! hot! hot!), slice  in half and let cool enough so you can hold.  Scoop out seeds and toss out.  Scoop out meat and put in a bowl.  Squeeze the “meat” with paper towel to get rid of some moisture.  Mix with salt, pepper and nutmeg.  Heat oil in saute pan over medium – high and when hot, scoop out squash mixture, about 3 TBS per pattie, put into hot pan, pat down to form pattie and cook about 3 minutes per side. Keep forming the patties while cooking. Enjoy!

Signs of Spring…   8)

In this morning’s post, there were two photos of snow covered fields in the farm country of Richfield Springs, New York.  This afternoon, there are signs of spring in a budding garden of Utica, New York.
