Snow White Lamb and Desserts To Share

CNYEats A Taste of Utica NY Style Cheesecake

What a beautiful Saturday.  It was perfect for an early morning run.  16 miles and negative splits for the last 8 miles.  I’ll take it. CNYEats A Taste of Utica Baileys Chocolate Chip Cheesecake

My version of Utica’s Bailey’s Chocolate Chip Cheesecake should be CheesePIE.  I didn’t  use the 10” spring-form pan, I used a 9” deep dish pie shell.  Since there was extra filling, I also used a chocolate graham cracker crumb crust.  The recipe is found on page 159 of the book A Taste of Utica and is posted by Jo Giacovelli.  Crust: 1/4 cup butter 2 TBS sugar 1/2 tsp vanilla 1/2 cup all purpose flour Preheat oven to 400 F.  Beat the butter until soft.  Gradually add sugar and beat until light and fluffy.  Add vanilla and stir in flour. Chocolate with Francois: Chocolate Cheesecake with Orange Marmalade

A dark chocolate cheesecake with a rich cookie bottom crust.  How could anyone resist? This month’s Francois Payard recipe was chosen by Susan of Baking With Susan.  Make the cookie bottom first.  Francois calls this a Sable Breton.  It’s different from any cookie crust I’ve made before in that it uses HARD COOKED EGG YOLKS to make the dough flakier, more crumbly. New York Cheesecake and Minnie Mouse
