CNYEats A Taste of Utica Italian Polenta Casserole

I was curious about this weeks Taste of Utica recipe so I made a vegetarian version using dark red kidney beans and for Ted, I made the original version using ground beef, found on page 110 of our book Neither Ted nor I have ever been fond of polenta so this was going to be a true test of whether a Utica recipe can take a not so favorite recipe and use it in a dish that turns out a success. Polenta (poh-LEHN-tah) is Italian for cornmeal.  The cornmeal is cooked with liquid to form a soft mass. It may [...]

Jinx and Tuna Casserole

Wow I felt good Thursday! I had an appointment with the Sports Doc so I was able to sleep in until 5. I was all set to run 8 treadmill miles since the weather was a wintery mix of nastiness, when Shane came around the corner and said “Are we going out now?” *Shane is a dog so…well, you know I kind of put those words in his mouth but I’m really sure that’s what he would have said if he could. I have always liked running, so it wasn’t particularly difficult to make it a habit.  All you need [...]

Chili Con Crab in Kabocha

Feeling pretty good this week.  The 8 1/2 mile run on Wednesday didn’t cause any aches or pains. Thursday’s workout was 45 minutes of Elliptical + 45 minutes of weights (back, triceps, shoulders, abs) + 3.32 mile run with fur face.     I’m doing an experiment regarding workout fuel.  I’m trying to figure out what to eat before a workout that will work for my pre-race meal. I get up so early that there is not time for that 3  - 4 hour window of eating before I workout and I want to experiment to see what works well with [...]
