Tonight there was a special presentation by Apple Crumble’s very own chef  TED!  With just a little guidance, Ted cooked a terrific dish for his sister Debbie and brother Richard.  Here is his dish which, from the sounds of delight coming from the dining room, was a great hit.

Turkey Corn Casserole by Ted

  • 1 lb Ground Turkey
  • 2 TBS olive oil
  • 1 15 oz can of Sweet Corn
  • 1 1/2  cups Homemade pasta sauce (you will have to see the post Ms. K’s Spaghetti Sauce for that one).
  • 1 tsp minced garlic
  • 1 Butternut squash

Cook butternut squash in microwave for about 10 minutes. Slice and remove insides, toss away the seeds, put the cooked squash in a bowl.

Preheat oven to 350 F.  Cook the turkey on the stove top with the 1 tsp garlic in 2 TBS olive oil until done.  Add the corn and the pasta sauce and put into a casserole dish.  Spread the cooked squash on top and bake for 30 minutes, or until bubbling on the sides.

You can add any veggie you like to this dish such as peas, green beans, carrots… what’s your favorite?
