Thanks for your comment on my In The Bag entry. Wensleydale is a fresh, young cheese from Wensleydale in Northern England (if you’ve heard of Wallace & Gromit, they’re fans!). Feta would be a good substitute (although it’s a bit salty compared with the Wensleydale) but any young goats cheese would do!
