I forgot to take the Celebrity’s photo! Oh well. It was Shane! He came to work with me this morning and did really well. Hope I don’t have to pay him.
We left a bit early for lunch because I had some stops to make at the post office and bank. Shane got a nice biscuit from the window teller at the bank – he was happy. That was his payment for this morning’s work appearance.
I picked up a really interesting looking salad dressing that’s nutritionally and ingredient wise attractive:

Lunch was baked Tilapia with Maple Fig dressing, asparagus, rice and my broc-slaw/spinach salad mix. Yum! I set the oven to timed bake before leaving the house this morning, then tossed the fish and asparagus in the oven when I got home for lunch, on 425F Convection for about 12 – 14 min. It was ready by the time I was done preparing my salad!
Recycling Printer Ink Bags
I was trying to find those recycling bags for printer ink cartridges today. The post office doesn’t carry them anymore and I responded to something on the web which was bigcatrescue. But I haven’t received a response. If anyone knows where to get those bags, other than whats included with new cartridges, please let me know.
Tonight’s Tofu
I’ve gone “Maple Figgy” – so it’s baked Maple Fig Tofu.
- 1 pkg. Lite Firm Tofu – pressed and left to drain in fridge for the afternoon.
- 2 TBS Maple Fig Dressing
- 1 TBS Gomasio (see below for a description from TropicalTraditions.com)
Preheat oven to 375 F.
Slice tofu into preferred portion sizes – I usually get 8 slices. Heat saute pan on med hi and spray with non-stick spray. Heat tofu 5 min per side and remove to a non-stick sprayed oven baking dish. Coat with the Maple dressing. Bake 6 min. turn over. Sprinkle with Gomasio and bake another 8-10 min. Use the left over dressing to pour over cooked tofu. Broccoli and parsnips were added as the vegetable choice.
Organically grown sesame seeds, roasted and ground with sea salt and three mineral rich sea vegetables, dulse, nori, and komub. A delicious nutty flavor condiment in a convenient, easy to use shaker. The oil of the seeds coats the sea salt amplifying and carrying its flavor so you experience more flavor. A great way to eat beneficial sea vegetables.
A muffin recipe found
I’ve got to try a muffin recipe I found at HappyHerbivore.com today. It is for Sweet Potato & Cranberry Muffins. They are whole wheat and vegan. Check it out at her site…..you’ll be baking too.
Baking with Carob
When I got home, I had a bit of time to kill before starting dinner so I experimented with a recipe I made up using Carob Chips. Will post it later. They came out very tasty but definitely have that fat free soft texture.
