Quorn

A Monday "Turkey" Roast

Where's my energy? Has anyone seen it?  It never came to me today. Was it the heat? Was it the busy weekend? Was it just because it was Monday?  What ever the reason, it was a rare event since I'm typically never lacking for energy.  Tonight's meal had to be simple. My mind was even having trouble keeping up, so nothing creative came out of it.  Ted did his own barbecue of cube steak and I used a Quorn Turkey Roast I mixed 1 TBS olive oil with fresh herbs of basil, rosemary and flat leaf parsley. The mixture was [...]

CEimB: Buffalo Chicken Salad with Homemade Blue Cheese Dressing

It's that time again! The time we have all been anxiously awaiting. Thursday's episode of Craving Ellie.  We have a creative group of cooks who enjoy cooking together in "blog land" once a week using the same recipe from Ellie Krieger's book "The Food You Crave".   This week's recipe was chosen by AJM of You Eat Now.  What a great choice she made. Both of us here at Apple Crumbles thoroughly enjoyed our meal.  For the complete recipe, go to AJM's blog, linked above and find out exactly how to create this tasty dish. But... don't go away... since you're here, [...]

CEimB: Chicken with Mango Barbecue Sauce

Doesn't that recipe title just make you want to cook it?  It IS as good as it sounds.  Thanks to Aggie of Aggies Kitchen who picked the recipe for all the CEimB cooks this week and where you can go to get the recipe should you want to make it.   Here we go... Most of the ingredientsMost of the ingredients are pictured. Missing from the photo are the olive oil, salt, pepper, lime juice.   I substituted red wine for the red wine vinegar.  As for going by the ingredient measurements in the recipe, I must confess that I reverted back to my wicked ways and [...]

Mustard BQ Chicken Breasts or Quorn

This dinner smelled really good while cooking. The mustard and barbecue sauce gave off aromas which reminded me of chicken wings on a summer picnic.  This recipe idea came from the Hannaford's Fresh magazine I picked up at the health expo.  You may be able to find the original and others at the Hannaford site.  I offer my version here and keep in mind, all you Vegetarians, I used Quorn Naked Chicken breasts.  For my husband, we used 4 boneless chicken breasts, flattened with a mallet to make them thin. 1/4 cup Barbecue Sauce - your favorite 1/4 cup mustard - your [...]

CEimB Teriyaki Chicken Thursday

I was sneaking some peaks at the CEimBmembers who already cooked up this delicious looking dish. There wasn't one review that didn't love this recipe. There were actually two sites that used Tofu instead of chicken. That's a keeper for me. But for tonight, I will use the chicken thighs as called out by the recipe. The Teriyaki Chicken was chosen by Johnstone's Vin Blanc... make sure to check out the site. Here are the marinade ingredients: I made up the marinade Wednesday night. It was just too easy.  I didn't think I had the dark brown sugar [...]

Chicken and "Chicken-Less" Cacciatore with CEimB

It was Craving Ellie In My Bellie (CEimB) night!   Read on troops! Ted picked out the chicken in the grocery store. I asked "would you prefer boneless breasts?"  He said "No. The bone in breasts will have more flavor".  So we bought a huge package of 5 Jumbo Chicken breasts (left overs in mind).  Skin attached.  The Substitutions: For my version, the "chicken-less" version, I used "Quorn" Naked Cutlets and canned mushrooms.    For both dinners I used fresh tomatoes instead of canned. Here is a picture of the ingredients used and offerings of other tid bits. I didn't need the red wine. I [...]
