A Chef’s Attire and Chicken (or not) In Orange Sauce

Here it is. My “proper dress” for the great Morning Glory Bun Bake Off.  Of course I’ll be wearing a white collar shirt and my hair will be up probably in one of those gorgeous looking hair nets. EEEKKK! The scruffy chef, above, in the long apron…here’s a close up The chef in the shorter apron….Ted said “POSE!”  A model, I’m not! “Honey? Do my arms look fat?”  The close up I’m waiting for my red and white pants (that would be one pair red, one pair white NOT red and white), then I’m all set for kitchen duty. In [...]

Orange Chicken Salad with Sweet Potato Croutons

Running, weights, and bike rides  I was awake at 3:40 am and the alarm had just begun to glow.  I decided I would wait for it to sound instead of getting up.  By 4:10 I was in the gym.  Shoulders and abs were on tap today.  Great workout for shoulders, 12 reps per set and beginning with cables: presses x 4 sets.  upright rows x 4 sets. lateral raises x 4 sets.  Using a set of 20 lbs dumbbells, I did more presses x 4 sets.  In between the shoulder sets, abs were worked x 4.  16 sets of shoulders [...]

CEimB Lemon-Garlic Marinated Chicken

This week’s recipe should be Lamb Chops.  There are two meats that are just not welcome in our house:  lamb and veal.  If Ted has a penchant for those meal choices, he must eat out.  When I saw this week’s Craving Ellie recipe, I wondered what would be a good substitute?  The decision was chicken for Ted and Quorn for me. The recipe was chosen by Debbie of Dining with Debbie.  You will find it written out at her site so be sure to visit.  Ellie Krieger describes the original recipe as “A simple Greek-inspired marinade of lemon, garlic, and [...]

Preparations

I would love to eat one of my HUGE Saturday morning omelets with heaps of hot cherry peppers, topped with Tabasco sauce.  That would have followed my 8 – 10 mile run with Shane but no.  No because I am running my first half marathon tomorrow and I am being extremely careful with the foods I put in my body. This obsession began on Monday but has reached painful proportions as of yesterday when I couldn’t have all the wine I wanted (I can only drink 2 glasses at the most, to be honest) and I felt guilty about having [...]

CNYEats A Taste of Utica Cannellini Chili

This weeks recipe from A Taste of Utica  is on page 31 and posted by Jerry.  “I came up with this recipe because of my love of Utica’s Chicken Riggies”. Cannellini Chili:  Italian chili in the style of a Chicken Riggies sauce. I made this recipe for my parents and Ted while in South Carolina.  I made one meatless version for myself using Quorn    so I could get the texture of chicken in the chili and I used a salt substitute for my father (he doesn’t use salt) .  The other change I made was to add mushrooms. My [...]

CEimB: Maple Mustard Chicken Thighs

There isn’t an easier, tastier recipe than this weeks CEimB chosen by Tessa at Handle The Heat.  Maple Mustard Chicken Thighs.  It just sounds so sexy, doesn’t it?  Maybe it’s just me. Great pick Tessa! The result is a sweet and tangy flavor on a juicy chicken thigh (woo! woo!)…for all you meat eaters.  For us Vegetarians who may have used “Quorn”, the flavor was still sweet and tangy but not as juicy.   Ellie says the sauce made of 1/3 cup grainy French mustard + 1 clove minced garlic + 3/4 tsp dried marjoram + 3 TBS Pure Maple [...]
