FOFF Cheese Pillows in a Pumpkin Sage Sauce

This week, Carla Vavala offers a new twist on a delightful “old faithful” meal: Ravioli. The twist is the sauce. If you thought pumpkin was just for pancakes, pies, muffins, and bread, you have been so wrong.  It makes a terrific savory sauce!  This recipe opens up so many possibilities for all of us who like to experiment with ingredients. Page 46 of our book Fusion of food and friends. 1/2 cup dry white wine 1/4 cup chopped shallots 1/2 cup mushrooms 8 oz. mascarpone cheese 3 TBS butter (I used oil) 1/4 cup milk 1/2 cup 100% pumpkin 1/2 [...]

Yasso’s Yes? or No? and Ratatouille Pasta

This week’s speed work was 800 repeats or some would call them Yasso 800’s.  The Yasso 800’s are for marathoners looking for a very specific time goal.  A lot of folk do the Yasso repeats then a lot of folk say they don’t work.  I incorporate them into my workout simply for variety. How to do the 800’s: First of all, the name "Yasso" is from Bart Yasso, a well known distance runner  who popularized the workout. This is how to do a Yasso 800 workout: Convert your marathon goal time in hours and minutes to minutes/seconds. Example: If your [...]

Sunny 18 and FOFF Spinach and Artichoke Stuffed Shells

I took the day off from the office and enjoyed an 18 mile long run.  The weather was perfect, my legs weren’t.  I had enough carbs in me to fuel an ultra but mentally wasn’t very tough.  That doesn’t mean I didn’t enjoy my run.  It was gorgeous outside. I ran 6 miles with Shane.  It’s always nice running with my big dog.  Took off again from home after dropping him off to run the switchbacks.  The shaded woods were so nice that I ran that hilly route twice. While running up to the eagle from the switchbacks, I notices [...]

Gluten Free Penne with Spinach and Ricotta

I bowed out of my Sunday run, it was –4 degrees outside and the treadmill just wasn’t calling my name. Monday was a good workout with 5 miles on the treadmill before doing a 25 minute weight workout THEN finishing with another 3 speedy miles on the mill. 8 miles logged for Monday, a good way to start the week. Tuesday morning was a mid range run on schedule for 11 miles.  The temperature read 31 deg., no sign of  wind nor wintery mix so I headed out with Shane for 4 1/2 warm up miles before doing a series [...]

CNYEats A Taste of Utica Pasta Primavera (Fat Free)

If you have been following along, you probably thought I should be making “My Mama’s (God Rest Her Soul) Tomato Pie”, but that was posted in March. *Click on the link to see that terrific recipe. Wouldn’t want you to miss out! THIS WEEK, we have just as good, Fat Free (if you don’t count the cheese) Pasta Primavera by Mario Scalzo Jr.  Page 134 of our book To be honest, I think a little bit of olive oil would do this recipe good AND that little bit of healthy oil would help deliver all the nutrients held in those [...]
