Recovery or Taper and Bow Tie Pasta with Egg and Capers

I’ve read all sorts of articles about recovering after a marathon.  Some say take a day off for every mile. Some suggest a couple of weeks. Some say jog a couple of miles the night OF your marathon then rest or cross train for a few weeks.  With the increasing interest of running back-to-back marathons, those recovery suggestions are sometimes not possible.  There are rules however:  1. Don’t expect to run all out in back to back events. 2. Listen to your body. If you are hurting/injured, not just sore, after your first event, play it safe and pass on [...]

Running Mistake and Picnic Pasta with Pine Nuts

My running speed sessions typically fall on a Tuesday and early in the morning as all my training runs typically do.  If you keep up with good training habits, you know that eating just a little something about 30 to 60 minutes before heading out is a healthy habit.  This is especially important if running for over an hour, in hot weather, AND doing a hard workout. Tuesday morning’s tempo run was ASTRONOMICALLY tough. Why? I ran for 65 minutes on 1/2 a cup of water and it was hot with high humidity. Bad, bad, bad. Talking more about Pre [...]

Whole Wheat Spaghetti with Mint Pesto and Zucchini Ribbons

The cooking range is finally installed in my kitchen.  Still no counter tops but a desperate cook can work around that and so I did.  Based on a recipe from “Every Day with Rachael Ray”, I was able to use more fresh picked mint from the garden.  This is a vibrant pasta dish with fresh, summer flavors.  Even though we are still eating on paper plates, we enjoyed this mint-lemon whole grain pasta dish, knowing it was wholesome and pure because we picked it (well, the mint anyway) ourselves. Serves 4 to 6 2 TBS plus 1/4 cup olive oil 2 [...]

Guest Post: A Simple Dinner

Simple Spring Dinner: Creamy Spaghetti Squash with Tomatoes One of the best parts about spring—other than the sunshine and beautiful weather, of course!—is that it’s probably the easiest time of year embrace healthy eating. Eating well in the winter can be tricky; between holiday goodies and the abundance of cheesy, carb-filled casseroles, it’s easy to go overboard on foods that may not be that great for us. But when spring rolls around and fresh produce comes back into season, we seem to crave fresh, lighter flavors that tend to be healthier than many heavy winter meals. To lighten up your [...]

FOFF Farfalle with Creamed Basil, Mushrooms, and Peas

I’ve been eating a lot more pasta lately.  Guess that’s ok since I’ve got some long races coming up, although I try not to think of them as races.  It’s easier for my anxiety level if I think of them as “group long runs”.  Keeping with that thought, I’m not sure why this is beginning to happen to me again. What is “this”? Well, “THIS” is those questioning thoughts concerning my training for upcoming events.  Did I run enough miles?  Have I done my long runs fast enough? Efficiently enough? As I read other blogs and hear how well other [...]
