CNYEats A Taste of Utica Taralli-Italian Biscuits

A crisp, barely sweet Italian treat.  The recipe was a little confusing but I believe my tweaks and assumptions produced a near to perfect Taralli. Found on page 157 of our book A Taste of Utica and posted by Ruth. Makes approximately 3 dozen cookies (when the recipe is cut in half), 6 dozen or so for a full recipe. 10 eggs 1 cup canola oil 1 cup sugar 5 1/2 cups flour (the recipe said “sugar” but I think Ruth meant flour) *I used 1/2 whole wheat flour and 1/2 all purpose. 2 tsp. cremonna  = I looked EVERYWHERE [...]

CNYEats A Taste of Utica Italian Anisette Cookies

This past summer my niece was married and a cookie tray was prepared using select recipes from out book. One of the most popular cookies was the Anise cookie.  Page 196 of the Taste of Utica book. Delicious! This week, we’re baking a cookie very similar called the Italian Anisette Cookie, page 154  and posted by Toni (Leone) Guzski. “Toni, I tried your anisette cookie they were great. Thanks for posting it. – Angela.” Makes about 2 dozen 2 cups flour 1/2 cup sugar 3 tsp baking powder pinch salt 1/3 cup butter or shortening 3 eggs 1 1/2 tsp [...]

CNYEats A Taste of Utica Italian Wedding Cookies

Did I say there was a cookie earlier in the week that was my favorite?  Darn it! Who can decide? Here’s ANOTHER favorite of mine, the Italian Wedding Cookie. It’s so light with a gentle taste just like its crumb. The recipe source is Anita Burroughs and the post is by HJ from our book A Taste of Utica. 1 1/2 cups unsalted butter 3/4 cup confectioners sugar 3/4 tsp salt 1 1/2 cups finely ground almonds 4 1/2 tsp vanilla extract *seems like a lot but it works in this recipe 3 cups flour – sifted 1/3 cup confectioners [...]

CNYEats A Taste of Utica Italian Meatball Cookies

On page 212 and posted by Ruth you are going to find the most delicious cookie of all time. In fact, after one bite, I had another, then another.  By the time I was ready to take photos, I had eaten too many and couldn’t split one to show you the moist rich chocolate center filled with nuts and raisins. Oh well. You’ll just have to make these yourself. Be careful. This will do serious damage to your diet (but it’s worth it). Italian Meatball Cookies (the frosting is like the sauce on the meatball – cute!) *Makes a LOT [...]
