Cuccidati: Italian Fig Cookies with Gluten Free Pastry Crust

So much for not running. I did manage to take 3 full days off, just doing weights and walking the dogs.  By Saturday, I figured it was worth while “testing the water”.  After getting back from a long walk with the dogs, I hopped on the treadmill for 3 miles.  The knee felt ok. Then it got sore as the day went on.  By bedtime, the pain had subsided.   Sunday morning, no excruciating pain so I set out the door with Shane.  Starting out was a little painful but once I got to the end of the road, the pain [...]

CNYEats Italian Soft Cookies

It was a much nicer weekend for running in CNY.  The roads were clear and the weather slightly warmer.  It would have been a lot warmer if I chose to run later in the day but no. I’m a die hard early morning runner and will suffer what comes with it.  My weekend running was done in temperatures of 26 degrees to 32 degrees.  Can you believe that range actually feels good?!! Fried Ceci Cookies are a favorite for the holidays but just as good before and after your celebrations.  A “ceci” is a garbanzo bean aka chick pea and is the main ingredient for filling these cookies. CNYEats A Taste of Utica Sesame Cookies

If you remember back to last summer, I posted Regina’s Sesame cookies from the book A Taste of Utica. Today, we have Mella’s Grandson’s recipe for Sesame Cookies, on page 162 of our book There is another recipe on page 163 posted by Carm Guarnieri which is very much the same. The only change I made to this cookie was to replace the vanilla extract with Cocoa Bean Extract from NuNaturals.  What a good move on my part. Loved these cookies! *The recipe below is 1/2 the recipe from the book which resulted in 2 doz. cookies 2 cups flour [...]
