CEimB Four Cheese Baked Pasta with Shiitake Mushrooms

Is there really anything better than baked pasta? I mean…think Lasagna? Oh yum! This recipe wasn’t too far off from a lasagna come mac-n-cheese dish. It was really cheesy but had tomatoes in the sauce as well. Not sure how you could possibly go wrong with this dish. The recipe from our CEimB group was chosen by Lindsey of 71 Cookbooks. She sure knew how to pick ‘em. The original recipe didn’t  include mushrooms, but that never stopped me from adding those little fungi into a dish. At Christmas time, a very dear friend gave me a shiitake mushroom log [...]

CEimB Fettuccine with Red Pepper–Feta Sauce

I was so happy today. Got out of bed but then decided I would get some more sleep but Shane said "No Jo! Let's go!"  It was a warmer day at 29 deg. so I thought we would simply go outside and run until we wanted to stop.  It was the best run all week.  A good recovery pace, slow but right where I should be AND we enjoyed a 6 1/2 mile run.  A few thoughts came up during my run. The first was when we did a 180 deg. turn and I discovered why I was feeling so great. [...]

CEimB Walnut Cherry Bars

This week the  CEimB group is making something good and guilt free. That’s not unusual but we have been kind of stuck in a dinner/salad rut lately so these little goody bars were perfect. We were ready for them. The pick by Heide of Chez Zero who is one busy lady, was just what Ted and I wanted after the holiday plates of overly sweet treats. If Heide doesn’t have the recipe up yet, you can find it HERE. My version is below. Walnut and Dried Cherry Bars – Joanne’s version should read “Chocolate and Dried Cherry Bars” There were [...]

CEimB: White Chili

This week, Lesley of Lethally Delicious chose our recipe: White Turkey Chili. Ted had turkey burn out so I decided to use Tuna instead of Turkey. Tuna probably came to mind due to the “T” in “Tuna” and “T” in “Turkey”, not so surprising. If tuna isn’t a popular option in your family and you also have turkey “burn out”, simply make a white bean chili – Vegan Style. It would be just as good and just as nutritious. Ellie’s recipe can be found HERE. White Bean with Tuna Chili 1 tablespoon olive oil 1 medium onion, chopped (about 1 [...]

CEimB Taco Salad with Chunky Tomato Dressing

This week the Ellie group made a chili spiced salad with a deliciously fresh and tangy chunky tomato dressing. The pick was made by Peggy of Pantry Revisited.  Peggy has a great blog.  What I enjoy so much about Peggy is that we tend to think alike in our blogging enjoyments as well as annoyances.  It’s great to have good internet friends. Thumbs up Peggy! Back to the recipe….what a flavorful meal and so easy to put together.  We had this dinner on Sunday when all I had on my mind was pizza and no fooling around in the kitchen.  [...]

CEimB Tortellini Spinach Soup

Oh how I miss the warm days of summer… However, if it were hot outside, we probably wouldn’t be cooking soup! This week Bri of Yoshimi vs Motherhood picked our Ellie recipe. It was the perfect meal for a rainy, cold night in New York. Quick, easy, filling and delish!  Visit Bri’s blog for the “real”recipe because, as you know, I tweaked it a bit. 1 TBS olive oil 1 medium yellow onion, chopped 2 tsp minced garlic 1 carrot, peeled and chopped small 2 ribs of celery, chopped 8 oz sliced mushrooms 1 tsp dried oregano 1 tsp dried [...]
