CEimB Cioppino

This week’s Craving Ellie pick is by Margaret of Tea and Scones.  Such a cozy little site with good things always cooking.  Cioppino.  I kept wanting to add an “h” in the spelling since it’s pronounced “Cho-pee-no”.  After you get the spelling right, you can find out what it is:  Italian fish stew.  It’s one of my favorites and Ellie’s recipe didn’t disappoint. 1 TBS olive oil 1 onion, chopped 2 celery stalks, chopped 4 tsp minced garlic 1 TBS chopped fresh thyme (A thyme tip:  Take the fresh little twig of thyme and simply rub your fingers down the [...]

CEimB Wheat Pasta Salad with Walnuts and Feta

“It’s the easy-to-bring salad that everyone will be fawning over at your next potluck.”  Ellie describes this salad perfectly and without a doubt, everyone will “fawn” over it.  An absolutely, surprisingly, spectacular salad so easy to make and so utterly delicious. Can you tell that Ted and I thought this recipe was super?!! A fabulous pick by Kayte of Grandmas Kitchen Table.  This salad will be remade time after time after time. It was THAT good. Here is the on line recipe and of course go to Kayte’s site to see how she made this dish. The following are the [...]

CEimB: Mushroom Onion Basil Pizza

And she did it HER way.  This week was my pick for Craving Ellie.  Pizza!  You can buy a 10 oz pre baked thin pizza crust or you can make your own.  Let’s go all the way here and make our own.  If you have a bread maker, simply add the following ingredients in the order your bread maker’s manufacturer suggests.  Otherwise, it’s really easy to make the dough from scratch using your hands, very little muscle and a clean countertop. To make 2 Lbs of Pizza Dough *For the Ellie recipe, you may only need 1/2 pound to get [...]

CEimB: Tuna Pot Pies

Rush, rush, rush again today.  It was out of bed by 4 am and out the door with Shane.  We packed and are currently en route to Florida.   It’s a WEDDING CELEBRATION!  Don’t you just LOVE weddings?!  I get to rest my weary running legs for a day but I’m really looking forward to some beautiful mornings of running in Del Ray Beach.  Speaking of which, another quote from Runner’s World: Desiree Davila, marathoner:  Stepping outside the comfort zone is the price I pay to find out how good I can be.  If I planned on backing off every time [...]

CEimB: Apple Brown Betty

Lucky Betty!  She has such a delicious dessert named after her.  She will never be forgotten.  This week’s recipe from CEimB, is hosted by Jessica of Learning to Love Vegetables. Although the photos look dark (ok…burnt), the dessert was perfect.  You see, I used molasses in place of the brown sugar which colored my wheat bread a very dark, almost black color before it was cooked.  The result:  Excellent!  We really loved the molasses, not too sweet flavor.  For the original recipe, go to Jessica’s site or HERE for the foodnetwork online version.  The Apple Crumbles version goes like this….. [...]

CEimB: Tomato Clam Soup

This week, the Ellie group cooked up heart warming soup.  I didn’t have the tortillas since shopping was put on the back burner due to a late return from our marathon weekend. Instead of making Tomato-Tortilla Soup, I made Tomato Clam Soup.  The recipe was customized with what we did have on hand and the result was once again, a rewarding meal.   Thanks to Mary of Popsicles and Sandy Feet for the pick. The Apple Crumbles version: *Serves 4 1 TBS olive oil 2 green onions, chopped 2 cloves garlic, minced 1/4 cup Mezzetta TAMED jalapeno peppers, chopped *These gave [...]
