FOFF Vegetarian Sweet Potato Burritos

A day early and a dollar short…or something like that. Anyway, the FOFF recipe is a day early this week for no reason, just that I felt like posting it early.  My blog, my prerogative. SO Filling!  But not so photogenic or could just be the photographer …eh hemmm! A really good meal for high nutrition and low fat diet watchers.  It’s a keeper!  Thanks to Carla Vavala and her book Fusion of Food and Friends. Page 44. 1 TBS vegetable oil (I used olive oil) 1 onion, chopped 4 cloves garlic, minced 3 TBS chili powder (I toned it [...]

These guys are keeping me entertained. Everyday they do something that gets me giggling. Look what they bought Ted for Father’s Day: Shane sent his “pennies” my way and I helped him order a 6 bottle bucket of international beer plus nuts, crackers and sausage.  A MAN’S bucket of goodies.  Love Shane and Zoey. FOFF Oven Fries

Page 35 of Carla Vavala’s book “Fusion of Food and Friends”. I'm sure you know about this easy way to make homemade fries? If not, the result is so good and better than Micky D’s (or at least from what I remember…it’s been YEARS since going to the Golden Arches). Serves 4 1 1/4 lb potatoes (I used 4 medium potatoes) 2 TBS red wine vinegar 1 TBS olive oil (I used the Rosemary infused oil - DELISH!) 1/4 tsp salt (Guilty - think I added about 3/4 tsp for salty fries) Cooking Spray (In place of non stick spray, [...]

FOFF Baked Asparagus with Balsamic (Butter) Sauce

Asparagus is one of my favorite vegetables. It’s so good for the body, when ever I can, this green, stalky, vegetable is added to my plate. Health benefits of Asparagus – Source:Nutrition-And-You Asparagus is a very low calorie vegetable. 100 g fresh spears give only 20 calories. More calories will be burnt to digest than gained.. The shoots have good levels of dietary fiber. Dietary fiber helps control constipation conditions, decrease bad, "LDL" cholesterol levels by binding to it in the intestines, and regulates blood sugar levels. In addition, high fiber diet helps prevent colon-rectal cancer risks by preventing toxic [...]

I lied but came clean and Spinach Lentil Soup with Assorted Crackers

I lied. Last night, I DID get 8 hours of sleep and then some. Remaining true to myself, I came clean about running and ran because I wanted to be out there, not trying to break some personal record. The other day, in my list of twelve don'ts, I said I don't sleep 8 hours. Monday night my body and mind were exhausted. While Ted was downstairs working up a sweat on the trainer, I set myself onto the couch and fell asleep at 7:15 pm. I heard someone mutter "Joanne? Joanne...you're asleep." I grunted, got up and walked upstairs [...]
