Boilermaker Goals and Zucchini Fritters with Jerk

It’s almost time for the Boilermaker road race.  Excitement and nervousness fill my body.  Every year I say “If I can come in at 70 minutes, that’s it! I’m done! No more Boilermakers!”  The reality is that I’m just not that fast. I’ll be running Boilermakers for a long, long time.  Some of my running goals are unrealistic.  Sure it’s great to have goals and maybe some of those goals are far reaching but as long as I can maintain perspective, realize my limits, then why not hold tight to those extremes?  Who knows, anything can happen on any given [...]

Running Paws and Meatless Roast Potatoes with Romesco Sauce

Zoey was just aching to get outside and run.  While I was doing the Diva in Myrtle, Ted was doggy sitting.  He had his own training schedule and a long run with the dogs wasn’t in it.  Shane is still on walking rehab due to his “plantar fasciitis” so Zoey and I went out for 4 miles Tuesday morning.  It was a recovery run for me and a “just let me stretch my legs” kind of a run for the Zo-Mister.  We went to the golf course where I could let her run without the leash, up the hill and [...]

CNYEats A Taste of Utica Speculatius Cookies

It was a surprise to find this recipe in our Utica book, A Taste of Utica since the origin of the cookie is believed to be Holland or The Netherlands. From The German Food Guide: History There are two theories about where the name Spekulatius originated. The first theory states that the name came from the Latin word Speculum, meaning "mirror." It refers to the wooden cookie mold that imparts its design onto the cookie. The second theory states that the name comes from the Latin word Speculator, meaning "bishop", "overseer", or "supervisor." The connection here is that Speculatius and [...]

FOFF Baked Chicken or Vegetarian Option with Capers

Really rotten run this morning.  BLAH! It was the first run with snow covered sidewalks, slush in the road and a slippery surface from the winter weather.  It was a run laden with several stops because of Shane, because of winter running pants falling down, and finally, because of Zoey.  I didn't stop the Garmin everytime we took a "time-out" which is why I didn't even run 6 miles in an hour.  Came close but not quite the goal. I don't like having bad runs like those that the winter weather can cause.  It feels as if I didn't even [...]
