It’s All About Effort and Almond Paste Cake

I was along for the ride today while running with friends.  Turned out to be quite an interesting run.  We had no time goal except S L O W.  One of us wanted to do 15 miles, another 14, and me, 12. We left from my house so I mapped out our route:   Although it was cold, it wasn’t as cold as any of us had anticipated. Amy made a comment with somewhat frozen mouth “The only part of me that’s cold is my chin”.  I heard the comment and thought I heard “tit”, but said nothing.  Shirley questioned [...]

A Peanut Butter Surprise

Wow! I mean… there is no other way to say it but   WOW! Checked the mail yesterday and this is what I found:  Eight jars of the best peanut butter I’ve ever tasted. Not kidding!  I’ve always loved Teddie peanut butter because it was so pure and tasty but when we jumped right into our Peanut Butter Boy PB, we found new love. It was so natural tasting and not as sweet.  The texture for the creamy blend is smooth and soft AND the oil wasn’t separated.  A recipe is included on the jar for Cinnamon Peanut Butter. Here’s more [...]

Banana Nu-Bread Pudding

With 1 quart of skim milk that was unopened and nearing expiration, what else could I make? Oh sure, some healthy soup but that’s not as much fun to make as a good old dessert that brings back childhood memories of Mom’s cooking.  Bread Pudding!   Using skim milk, an over ripe banana and some Nu-Naturals Simple Syrup and Nu-Naturals Cocoa Syrup, this is a reduced fat, reduced sugar version of one AWESOME dessert. *Don’t have any Nu-Naturals Stevia product, get it HERE or, simply double the sugar in the recipe to 1 cup. Serves 16 1 Quart Skim Milk 1 [...]

Peanut Butter-Strawberry Kissed Cupcakes

After Ted’s last Triathlon for 2014, we celebrated with some delicious “kissed” cupcakes. But first, the endurance event put on by ATCEndurance.  Start time was 7:50 am for a 800 meter swim, cut down from 1000 meters, not sure why.     Good swim with a few kicks here and there.  It seems with the reconfigured course, swimmers were getting in the way of each other more than usual. OR, maybe they were just in Ted’s way more than usual?? On to the bike.  It was cold so our athlete dressed for a chilly 18 mile ride. The bike went as [...]

#Driscoll’s @strawshort Very Berry Shortcake Crumble

When a coupon for Driscoll’s Berry’s came in the mail, there was no question what dessert would tempt our diet discipline this weekend.  A shortcake made with plump, juicy, sweet berries. Not just strawberries, but raspberries and my favorite blueberries.   Not just a simple shortcake either but a shortcake crumble because, well, you’re visiting this site and we love crumbles. Start by making 8 homemade shortcakes with a granola topping. Preheat the oven to 450 F and line a large baking sheet with parchment paper. You will need the following for the shortcakes: 2 cups all purpose flour 4 tsp [...]
